  • Barbados rum: Smooth and slightly caramel-like adds warmth and depth. I used Planteray Barbados Rum.

  • Simple syrup: Use bottled or equal parts water and sugar.
  • Orange Blossom Water: It’s optional, but adds a delicate floral note. I like this orange blossom water.
  • Blue spirulina: Gives the drink its stunning natural blue hue. I use this one.
  • Pineapple coconut juice: Look for 100% juice! Langers pineapple coconut juice is so good!

  • Rum swap: Swap Barbados rum for white rum, coconut rum or dark rum.
  • Pineapple coconut alternative: Use pineapple juice + a splash of coconut milk or coconut water
  • Juice Swap: Swap pineapple coconut for plain pineapple juice or mango juice.

How to Make Tropic Blue Cocktail

​​Step 1: Add salt, sugar and dried edible flowers to a shallow dish. Coat the rim of your glass with citrus juice or honey, then dip in the salt mix until coated.

Step 2: Add all cocktail ingredients and ice to a shaker. Shake well until chilled and combined.

Step 3: Strain into the prepared glass over fresh ice and garnish with pineapple and an edible flower.

If you can’t find pineapple coconut juice, use pineapple juice with a splash of coconut milk or cream of coconut. This keeps the tropical flavor while maintaining the same light, creamy balance.

Can I make this cocktail without alcohol?

Yes! Simply leave out the rum and replace it with coconut water or top with sparkling water.

Can I make a batch of this Tropic Blue Cocktail?

Yes! Combine the pineapple coconut juice, lime juice, rum, simple syrup, orange blossom water, and spirulina ahead of time and refrigerate. When ready to serve, shake with ice or pour over ice for individual glasses.

What can I use to make a cocktail blue instead of blue spirulina?

For a similar blue color, you can use butterfly pea tea (non-alcoholic) or blue curaçao (alcoholic). Keep in mind this will slightly change the flavor.

Tropic Blue Cocktail (Pineapple Coconut Rum Drink)

This tropical Blue Cocktail is a vibrant rum drink made with pineapple coconut juice, fresh lime and blue spirulina for a naturally ocean-blue finish. Refreshing and not overly sweet, it’s ready in just 5 minutes, making it perfect for summer entertaining and poolside sipping.

Ingredients
 

  • 1 1/2 oz Barbados rum
  • 1 1/2 oz pineapple coconut juice
  • 3/4 oz lime juice
  • 1/2 oz simple syrup
  • Dash of orange blossom water
  • Dash of blue spirulina
  • Dried edible flowers and sugar, for rim
  • Pineapple slice and edible flower, for garnish

Instructions
 

  • Add sugar and edible flowers to a shallow dish. Moisten the rim of a cocktail glass with citrus juice or honey, then dip in the sugar mix until coated.
  • To a cocktail shaker, add rum, pineapple coconut juice, lime juice, simple syrup, orange blossom water, blue spirulina and ice. Shake until well chilled.
  • Strain the cocktail into the prepared glass over fresh ice. If desired, garnish with a pineapple slice and edible flower.
