Our recent babymoon to Oahu inspired me to make this pretty blue non-alcoholic drink. It is based on a Blue Hawaiian cocktail, the classic rum drink made with rum, cream of coconut, pineapple juice and blue curacao. 

I thought the bright citrus notes of lime and orange would pair nicely with the tropical flavors, and I was right! To avoid artificial coloring, I used blue spirulina to give this drink its signature blue hue. I finished it off with a salt and edible flower rim. This tropical treat is perfect for baby showers, pool parties and summer get togethers. It’s a great kid-friendly Hawaiian drink as well!

Recipe Ingredients

  • Pineapple juice: Look for 100% pineapple juice.
  • Orange juice: Bottled or fresh squeezed both work.
  • Cream of coconut: You can find this canned or in a bottle. You can substitute with coconut cream or coconut milk but may want to add another sweetener for balance. 
  • Lime juice: fresh squeezed is always best
  • Blue spirulina powder: This is optional but gives the drink its blue hue. I used this Blue Spirulina Powder.
  • Sparkling water: Or club soda
  • Salt or sugar and dried edible flowers: For rim. I love these Dried Edible Flower Sprinkles.
  • Pineapple and lime slice: for garnish

How to Make This Recipe

Step 1: On a shallow dish, combine salt (or sugar if preferred) and dried edible flowers. Moisten the rim of a cocktail glass using citrus juice or honey. Dip in the salt mixture until coated.

Step 2: To a cocktail shaker – add pineapple juice, orange juice, cream of coconut, lime juice, blue spirulina powder and ice. Shake for 20-30 seconds until well chilled.

Step 3: Use a fine mesh strainer to double strain into your prepared cocktail glass over ice. Top with sparkling water. If desired, garnish with a pineapple slice, pineapple frond and lime slice.

  • Chill your ingredients.
  • Use a fine mesh strainer to avoid any clumps of blue spirulina.

Frequently Asked Questions

What can I use instead of blue spirulina powder in a mocktail?

Try butterfly pea tea if you’re looking for another natural coloring alternative. Blue curacao syrup (non-alcoholic) will also give a drink a blue hue but will make the drink sweeter.

Can I prepare the Blue Hawaiian Mocktail ahead of time for a party?

Yes! Scale the ingredients by the number of servings you want to make. Add all ingredients, except the sparkling water, to a blender. Blend with a handful of ice. Store in a pitcher in the fridge until ready to serve. Add chilled sparkling water and ice and serve immediately.

Can I make a low-sugar Blue Hawaiian Mocktail?

Yes! Substitute unsweetened coconut milk for cream of coconut. Add an alternative sweetener like monkfruit to taste.
