I’ve always preferred a peach bellini to a mimosa, so now that peach season has arrived, I wanted to expand on the traditional pairing of peach puree and prosecco. My spritzy variation adds elderflower liqueur and sparkling water, which are the perfect complement to fresh peach. For a fun presentation, I made these an open can cocktail by using a soft edge can opener.

Recipe Ingredients

  • Peach: Choose a ripe peach to make peach puree. Alternatively, you can use bottled peach nectar.
  • Elderflower liqueur: I used St-Germain.
  • Prosecco: Pick a high-quality sparkling white wine of your choice. Champagne or cava would also work.
  • Sparkling water or club soda: I used LaCroix Strawberry Peach but any flavor sparkling water works well.
  • Fresh Mint, edible flowers, lemon: For garnish.

How to Make This Recipe

Step 1: Prepare peach puree – Slice peach and add it to a blender with a splash of water. Blend until smooth then strain the mixture using a fine mesh strainer to remove any skin and solids.

Step 2: Fill a wine glass or prepared open can with ice. Add the peach puree, elderflower liqueur, prosecco, and sparkling water and stir to combine. Garnish with mint, peach slices, edible flowers and lemon if desired.

  • Peel peaches before blending and you can skip the straining step.

Peach Puree Notes and Tips

Fresh peach puree definitely has the best flavor, especially when peaches are in season. Bellinis are traditionally made with white peaches, but ripe yellow peaches also work well. If you can’t find great peaches, you have other options.

Frozen peaches are a great alternative—just fully defrost before blending. If using frozen fruit, you may not need to add water.

If you want to skip the blending step, bottled peach nectar is also an option. Peach nectar often has added sweetener so you may need to play with the quantity to find the perfect flavor ratio.

Can I use canned peaches for a bellini?

Yes! Add canned peaches and their juices to a blender and blend until smooth. For best results, use canned peaches in 100% juice.

Can I make a non-alcoholic Bellini Spritz?

Yes! Substitute prosecco for non-alcoholic prosecco or sparkling water. Mionetto’s non-alcoholic prosecco is my absolute favorite. Swap elderflower liqueur for elderflower cordial or syrup.”

Is prosecco or champagne best for a bellini?

Bellinis can be made with any sparkling white wine but you can generally get a higher quality prosecco for a reasonable price. I like a brut or extra dry prosecco. My favorites are Mionetto and La Marca. Good quality champagne tends to be more expensive and you don’t need the most expensive bottle for bellinis since you’re adding other ingredients.

Bellini Spritz (Easy Elderflower + Peach Spritz)

The Bellini Spritz is a fun, floral twist on a classic peach bellini! Made with fresh peach, elderflower liqueur and prosecco, this cocktail is going to be your go-to summer brunch drink.

Ingredients
 

Peach Puree (makes 2-3 drinks)

  • 1 ripe peach
  • 2-3 oz water

Cocktail

  • 1 oz peach puree
  • 1 oz elderflower liqueur
  • 4 oz prosecco
  • Sparkling water, I used LaCroix Strawberry Peach

Instructions
 

  • Prepare peach puree: slice peach and blend with water until smooth. Strain out skin using a mesh strainer.
