Another week, another delectable peach cocktail! I mixed up this tasty cocktail with friends for my birthday dinner and everyone loved it! And they looked fab in Zafferano America’s fun party tumblers. The Peach and Lychee Cocktail combines exotic flavors with a refreshing twist, and using just a few simple ingredients, it’s the perfect drink to sip on all summer long.
This delicious batch cocktail is a fusion of sweet peach juice, tangy lemon juice, and the unique taste of pandan-infused gin. Lychee juice from canned lychees adds a subtle sweetness that complements the other ingredients perfectly.
The infusion process for the gin is takes 1-2 days, and is so worth it! It adds a depth of flavor that sets this drink apart from others. With just a few ingredients and a bit of prep, this cocktail is both sophisticated and incredibly tasty. Cheers!

Creating this delicious cocktail is easy and most of your prep time will be infusing the gin!
The first thing to prep is the pandan-infused gin. Combine gin and dried pandan leaves in an airtight jar and let it infuse in the refrigerator for 1-2 days. Once infused, strain out the pandan leaves and discard them.
Next, in a large pitcher, combine the pandan-infused gin, lychee juice from the canned lychees, freshly squeezed lemon juice, peach sparkling water, and peach juice. Stir well to combine all the ingredients.
To serve, divide the mixture into glasses filled with ice cubes. Garnish each glass with lychees, fresh peach slices, and edible flowers before enjoying!
What is pandan?
Pandan, also known as screwpine, is a tropical plant commonly used in Southeast Asian cuisine. Its leaves have a sweet, floral fragrance that is often compared to vanilla or coconut. Pandan leaves are used to infuse flavor into both sweet and savory dishes, and in this cocktail, they add a unique and aromatic note to the gin.
Why use canned lychees?
Canned lychees are convenient and readily available in grocery stores, and they come with lychee juice, which adds extra flavor to the cocktail. If you have access to fresh lychee, you can use them, but you’ll need to add additional lychee juice or simple syrup.
What are some other ways to enjoy pandan-infused gin?
Pandan-infused gin can be used in a number of drinks. Try it in a gin and tonic for a unique twist, or use it in place of regular gin in your favorite gin-based cocktails.
