The Bellini Spritz is a fun, floral twist on a classic peach bellini! Made with fresh peach, elderflower liqueur and prosecco, this cocktail is going to be your go-to summer brunch drink.
Prepare peach puree: slice peach and blend with water until smooth. Strain out skin using a mesh strainer.
Combine all ingredients in a wine glass or open can (like I did), with ice. If desired, garnish with mint, peach slices, edible flowers and lemon.

Peach Puree Notes and Tips
Fresh peach puree definitely has the best flavor, especially when peaches are in season. Bellinis are traditionally made with white peaches, but ripe yellow peaches also work well. If you can’t find great peaches, you have other options.
Frozen peaches are a great alternative—just fully defrost before blending. If using frozen fruit, you may not need to add water.
If you want to skip the blending step, bottled peach nectar is also an option. Peach nectar often has added sweetener so you may need to play with the quantity to find the perfect flavor ratio.
