This tropical Blue Cocktail is a vibrant rum drink made with pineapple coconut juice, fresh lime and blue spirulina for a naturally ocean-blue finish. Refreshing and not overly sweet, it’s ready in just 5 minutes, making it perfect for summer entertaining and poolside sipping.
Add sugar and edible flowers to a shallow dish. Moisten the rim of a cocktail glass with citrus juice or honey, then dip in the sugar mix until coated.
To a cocktail shaker, add rum, pineapple coconut juice, lime juice, simple syrup, orange blossom water, blue spirulina and ice. Shake until well chilled.
Strain the cocktail into the prepared glass over fresh ice. If desired, garnish with a pineapple slice and edible flower.
