Strawberry and coconut is such a dreamy, dessert combination and I love the way the creamy and fruity flavors work together. This cocktail gets infused with a little touch of citrus from the Cointreau and then finished with a shimmer from the edible glitter. Great for parties or get-togethers, everyone will oooo and aaaah over their charm!

Why You’ll Love This Recipe
- Easy to prep ahead: All you need is 15 minutes and some chill time.
- Light and refreshing: As opposed to all the chocolate eggs you’ll be guzzling.
- Big batch: Great for parties as the recipe makes 16 pieces.
- Dessert + cocktail: I love that this can double as a dessert and a cocktail!
Key Ingredients
See the recipe card for quantities.
- Vanilla Vodka: I adore Absolut Vanilla for this recipe.
- Cointreauor Triple Sec: Adds the most delicious flavor and kick.
- Coconut Milk: I recommend using it slightly chilled.
- Gelatin: Knox Gelatine is really easy to use in this recipe.
- Strawberry Juice: I used Simply’s strawberry juice for these Easter egg jello shots.
- Edible Glitter: It’s got to be pink! Powder blue is pretty, too.
- Coconut Oil Spray: So the little jellies slip out easily.
- Whipped Cream: Or a whipped topping will do.
- Optional Toppings: Play with sprinkles, edible flowers or mint!

Substitutions & Variations
- Liquor swap: Swap vanilla vodka for regular vodka, whipped cream vodka, coconut rum or even a light rum. Try replacing Cointreau with orange liqueur or peach schnapps.
- Juice swap: Raspberry juice, watermelon juice or pink lemonade are all delicious in these Easter egg jello shots.
- Coconut milk swap: If you’re not a fan of coconut, use half-and-half, heavy cream or almond milk.
- Gelatin: You can use flavored gelatin (like strawberry or raspberry) instead of unflavored gelatin.
- Less sweet version: Trade strawberry juice for water or a little club soda.
- Creamier version: Add a bit more coconut milk or some sweetened condensed milk.
- Color variations: Skip the pink glitter and divide the mixture to color with pastel food coloring.
- Mocktail version: Leave out the vodka and Cointreau and replace with sparkling water, lemon-lime soda or extra juice.
- Topping variations: Instead of whipped cream, try marshmallow fluff, chocolate drizzle, crushed cookies or toasted coconut.

Easter Egg Jello Shots
Ingredients
- 1/2 cup vanilla vodka
- 1/4 cup Cointreau or triple sec
- 1/2 cup coconut milk
- 3 0.25 oz pks gelatin
- 1 1/4 cup Simply Strawberry Juice
- 1 tsp pink edible glitter
- Coconut oil spray
- Whipped cream or whipped topping
- Optional toppings: sprinkles, edible flowers, mint
Special Tools
- 2 silicone egg molds
Instructions
- Bring strawberry juice to boil. In the meantime, add vanilla vodka, Cointreau and coconut milk to a mixing bowl. Sprinkle gelatin over mixture and let sit for 1 minute to soften.
- Add hot strawberry juice and pink edible glitter to the bowl. Stir until the gelatin is completely dissolved.
- Generously grease the silicone egg molds with coconut oil. Place the molds on a plate or board so they’re easy to transfer. Fill the molds with the gelatin mixture. Refrigerate for 3-4 hours or until firm.
- When ready to serve, carefully remove the jello shots from the molds. You may need to run a paring knife around the edges if they are sticking. Place on a serving plate. Top each egg with a dollop of whipped cream or whipped topping (whipped topping will hold for longer). If desired, top with sprinkles, edible flowers and mint sprigs.
