These 3-ingredient Jello shots are proof that simple can still be special. Champagne brings a crisp and luxurious flavor that is balanced by the sweetness of the sugar, while the gelatin gives them the classic jelly texture. Top them off with some gold sprinkles to add a celebratory shimmer to every square.

What Are Champagne Jello Shots?

Champagne Jello Shots are a sophisticated variation of traditional Jello shots made with sparkling wine instead of hard liquor. By using Champagne or prosecco as the base, they have a lighter alcohol content, delicate flavor, and a celebratory sparkle that makes them perfect for celebrations.

Substitutions & Variations

  • Sparkling wine swap: Use prosecco, cava, or sparkling rosΓ©.
  • Citrus add-in: Add a splash of fresh lemon or orange juice.
  • Custom Color: Add food coloring or colored sprinkles to customize for your event.
  • Mocktail Version: Swap champagne for non-alcoholic prosecco (I love Mionetto’s). Many non-alcoholic champagnes are sweet, so add sugar to taste.

How to Make This Recipe

Step 1: To a mixing bowl – Add 1 cup of champagne. Sprinkle gelatin evenly over the champagne. Let it sit for 5-10 minutes until spongy.

Step 2: In the meantime, heat 1 cup of champagne in a small saucepan over low heat. Gently warm the champagne for 3 to 5 minutes until it is just heated, but avoid simmering or boiling.

Step 3: Add the warm champagne and sugar to the mixing bowl with the gelatin and whisk until completely dissolved, around 3 minutes. Add the remaining 1 cup of champagne and stir to combine. Transfer the mixture to a lightly oiled 9×9 baking pan.

Step 4: Refrigerate for 3 hours or until firm. Once set, run a knife around the edge of the pan to release it. Gently flip it out onto a cutting board. Cut into 16 squares. If desired, sprinkle with gold sprinkles. Enjoy immediately or keep refrigerated until ready to serve.

Tips for Making Champagne Jello Shots

  • Never boil champagne. Gentle heat is key for proper gelatin setting.
  • Let the gelatin fully bloom before mixing for the best texture.
  • Avoid moving the pan while chilling so the shots set evenly.
  • Mocktail Version: Swap champagne for non-alcoholic prosecco (I love Mionetto’s). Many non-alcoholic champagnes are sweet, so add sugar to taste.
  • Liquor add-in: Add up to 1 cup of vodka or gin for a boozier version.
