Romantic and bite-sized, these strawberry jello shots are always a crowd favorite. Made with fresh strawberries, strawberry jello, Champagne, elderflower liqueur, and vodka or gin, they’re playful and elevated.

Each jello shot is served in a strawberry half, which makes them so much fun to enjoy. For a surprise finishing touch, they’re topped with Strawberry Pop Rocks right before serving; chef’s kiss!

I tested this recipe with vodka and without, and both turned out delicious! You can easily adjust the alcohol level depending on how you plan to serve them. Enjoy with your Valentine alongside a glass of champagne or straight from the fridge on a pretty plate.

  • Strawberries: You want large strawberries so they stay upright and have enough space to hold the jello mix. 
  • Strawberry jello: We used Jell-o, strawberry flavor in this recipe.
  • Champagne or prosecco: I always opt for prosecco. We used La Marca.
  • Elderflower liqueur: St. Germain Elderflower Liqueur is a great choice.
  • Vodka or gin: Both work beautifully.
  • Strawberry Pop Rocks: For topping.

Substitutions & Variations

  • Champagne swap: Swap for another sparkling wine like sparkling rosé or cava.
  • Jello flavor: It’s yummy with a raspberry center, too.
  • Elderflower liqueur swap: Swap for another liqueur like triple sec, aperol or limoncello.
  • Less alcohol: Eliminate vodka, elderflower liqueur or both. Add an additional ¼ cup of champagne.
  • Booze free: Use 1 cup of sparkling water or non-alcoholic prosecco (I love Mionetto) instead of alcohol.
  • Lower in sugar: Swap regular Jell-O for a no-sugar-added gelatin mix.
  • Shot cup option: Pour into plastic jello shot cups instead of strawberries.

How to Make This Recipe

Step 1: Prep strawberries – Wash strawberries thoroughly. Slice them in half, keeping the green tops on. Use a paring knife to score around the strawberry and use a teaspoon to scoop out the middle fruit of the strawberry. Place strawberries in a mini muffin tin so they sit flat.

Step 2: Prepare gelatin – Add the jello and 1 cup of boiled water to a mixing bowl; stir the ingredients together for 3 minutes until the jello powder is fully dissolved.

Step 3: Into the jello mixture, stir the champagne/prosecco, elderflower liqueur and vodka or gin. Pour this into a liquid measuring cup with a spout.

Step 4: Slowly, fill the hollowed out strawberry halves with the jello mixture and transfer the pan into the refrigerator to set for 3 hours or more.

Step 5: Just before serving, top the Strawberry Jello Shots with Pop Rocks and enjoy!

Champagne and Strawberry Jello Shots (Perfect for Valentine’s Day)

These Champagne and Strawberry Jello Shots are cute, fruity and made right inside fresh strawberries. They’re the perfect little treat for Valentine’s Day dates and Galentine’s parties.

Ingredients
 

  • 1 1 lb container of strawberries (large strawberries work best)
  • 1 3-oz box of strawberry jello
  • 1 cup boiling water
  • ¾ cup champagne or prosecco
  • ¼ cup elderflower liqueur
  • ¼ cup vodka or gin
  • Strawberry Pop Rocks, for topping

Instructions
 

  • Prep strawberries – Cut strawberries in half, leaving the greens on top. Use a paring knife to score around the strawberry and use a small spoon to scoop out the middle fruit of the strawberry. Place strawberries in a mini muffin tin so they sit flat.
  • To a mixing bowl – Add strawberry jello and 1 cup boiling water. Stir for 3 minutes, until the jello powder is completely dissolved.
  • Add champagne, elderflower liqueur and vodka or gin and stir to combine. Transfer to a liquid measuring cup with a spout.
  • Pour the jello mixture into each strawberry half. Transfer the pan to the fridge. Refrigerate for 3 hours.
  • Right before serving, sprinkle with Pop Rocks. Enjoy immediately or keep refrigerated until ready to serve.
