These Champagne and Strawberry Jello Shots are cute, fruity and made right inside fresh strawberries. They’re the perfect little treat for Valentine’s Day dates and Galentine’s parties.
11 lb container of strawberries (large strawberries work best)
13-oz box of strawberry jello
1cupboiling water
¾cupchampagne or prosecco
¼cupelderflower liqueur
¼cupvodka or gin

Instructions
Prep strawberries - Cut strawberries in half, leaving the greens on top. Use a paring knife to score around the strawberry and use a small spoon to scoop out the middle fruit of the strawberry. Place strawberries in a mini muffin tin so they sit flat.
To a mixing bowl - Add strawberry jello and 1 cup boiling water. Stir for 3 minutes, until the jello powder is completely dissolved.
Add champagne, elderflower liqueur and vodka or gin and stir to combine. Transfer to a liquid measuring cup with a spout.
Pour the jello mixture into each strawberry half. Transfer the pan to the fridge. Refrigerate for 3 hours.
Right before serving, sprinkle with Pop Rocks. Enjoy immediately or keep refrigerated until ready to serve.
Notes
Choose large strawberries so they’re easy to fill and serve.
Make sure the gelatin is fully dissolved to avoid a grainy texture.
Allow at least 3 hours of chill time for a perfect set.
Add Pop Rocks right before serving so they stay fizzy.
