Salon 75 (Sparkling Wine Cocktail)
The Salon 75 is a sparkling wine cocktail that’s a riff on the classic French 75! Mixed up with Domaine Carneros Ultra Brut, homemade lemongrass syrup, fresh lemon juice, and juniper extract.

When I partnered with Domaine Carneros in Napa, I wanted to craft a sparkling cocktail for their new swank Art Deco inspired lounge. I wanted to create a drink that would work with the chic art deco space and pair beautifully with oysters.
This cocktail is a riff on the French 75 without the gin and crafted to enhance the oyster experience with bright citrus notes, lemongrass, and hints of juniper. If you like the gin aspect of a classic French 75, try my other variations like Carrot French 75, Spiced Blueberry French 75, or the The Rosé French 75.
Throughout the testing process, I sipped on lots of variations and iterations of this drink to find the perfect version. I whipped up a batch with fresh lemongrass, which also turned out delicious. I experimented with lemongrass tea bags (didn’t love it), and played with a variety of ingredient ratios until we landed on this one. Cheers!

Juniper extract has a distinct, slightly piney flavor with hints of citrus and spice. It has similar botanical notes found in gin, but without the alcohol content.
You can prepare the lemongrass syrup in advance and store it in the fridge for up to 1-2 weeks. It’s best to assemble the cocktail just before serving, so the sparkling wine retains its effervescence and the flavors stay fresh.
Multiply the ingredient quantities by the number of servings you need. Combine the lemongrass syrup, juniper extract, and lemon juice in a pitcher. Right before serving, add the sparkling wine. Pour into individual coupe glasses and garnish with lemon twists and rosemary sprigs.
