The Salon 75 is a sparkling wine cocktail that's a riff on the classic French 75! Mixed up with Domaine Carneros Ultra Brut, homemade lemongrass syrup, fresh lemon juice, and juniper extract.

Ingredients

For the Cocktail

  • 1/2 oz lemongrass syrup
  • 1/4 tsp juniper extract
  • 1/4 oz fresh lemon juice
  • 5 oz Domaine Carneros Ultra Brut
  • Garnish: lemon peel, rosemary

For the Lemongrass Syrup

  • 1 cup boiling water
  • 1 cup sugar
  • 1/2 cup dried lemongrass

Instructions

For the Cocktail

  • Add lemongrass syrup, juniper extract and lemon juice to a coupe glass. Top with Domaine Carneros Ultra Brut.
  • Garnish with a lemon twist and rosemary.

For the Lemongrass Syrup

  • Combine boiling water and sugar and stir until dissolved. Add dried lemongrass and steep for 3 minutes. Strain the mixture into a container, using a fine mesh strainer, press through to get all liquid. Allow to chill before using.
