Frostbite Christmas Margarita (Pomegranate Tequila Cocktail)

With the holidays around the corner, I love creating beautiful and easy-to-make cocktails that capture the “spirit” of the holidays. The Frostbite Christmas Margarita does just that. The smooth tequila perfectly pairs with the tangy, fresh lime and pomegranate juices, while the rosemary infuses a woodsy aroma. The velvety foam from the egg white coupled with the pomegranate and rosemary garnish make this festive and fun cocktail, balanced and delicious.
This cocktail makes rosemary syrup right in the shaker, which eliminates the extra step of making a syrup in advance.

Recipe Ingredients

- Tequila: Your favorite tequila will work perfectly. I recommend using blanco (silver) tequila for this recipe.
- Sugar: I used granulated sugar but honey or brown sugar could be substituted.
- Hot water
- Pomegranate juice: I always recommend fresh juice when mixing cocktails. If you are short on time or patience, you can use bottled pomegranate juice from the store.
- Lime juice: Always use fresh squeezed lime juice.
- Rosemary sprig: Use one in the cocktail and some for garnish if desired.
- Egg white: Use real egg whites and not the ones from a carton. For vegetarians and vegans, use aquafaba. This recipe is also great without the egg white.
- Salt: Coarse Kosher or flake sea salt works best.
- Pomegranate seeds, lime slice, rosemary: Use for garnish if desired.

How to Make This Recipe
Step 1: Prepare glass – combine salt and sugar. Run a lime around the rim of a cocktail glass. Dip in salt mixture until rim is coated.
Step 2: To a cocktail shaker- Add a rosemary sprig, sugar and hot water. Muddle to release oils and dissolve sugar. Stir until sugar is dissolved. It might take a minute. Add tequila, pomegranate juice, lime juice and egg white.
Step 3: Dry shake (without ice) vigorously until foamy. Add ice and shake until well chilled.
Step 4: Strain into your prepared glass over fresh ice. If desired, garnish with a lime slice, rosemary and pomegranate seeds.

Tips for Making a Frostbite Christmas Margarita
- To make a vegan/vegetarian option, substitute the egg white for aquafaba from chickpeas. Egg white and aquafaba are both optional for this recipe.
- Mocktail version: Use coconut water or chamomile tea in place of the tequila.
Frequently Asked Questions
This Christmas margarita is not vegan, but there is an easy workaround! Aquafaba – strained juice from a can of chickpeas, can be used in place of egg whites for a vegan alternative, while still giving the cocktail a foamy and velvety finish.
It is important to dry shake a cocktail made with egg whites. This is what allows the egg white to emulsify and create the frothy foam for the top of your cocktails and also prevents dilution from shaking with ice. With that being said, still make sure to shake with ice after (or before) dry shaking to chill the cocktail.
Yes! Make the rosemary simple syrup in advance and strain out the rosemary. Add all the ingredients to a blender with 2-3 pieces of ice and pulse until all is blended and the mixture is chilled and foamy. Serve immediately over ice. If you want to make in advance, you can eliminate the egg white and add all ingredients to a pitcher with ice.

- 1/2 oz hot water
- 1 1/2 oz tequila
- 1 oz pomegranate juice
- 3/4 oz fresh lime juice
- Egg white, or 1 oz aquafaba
- Salt, for rim
- Optional garnish: pomegranate seeds, lime slice
