Easy Aperol Mimosa
This three-ingredient Aperol Mimosa made with Aperol, fresh squeezed orange juice, and chilled prosecco is perfect for hosting brunch.

When I think of fall, I think of home on the East Coast and the gorgeous colors of the fall foliage. That’s why I was inspired to create the Aperol Mimosa. The fresh squeezed orange juice shines bright yellow, balances the sweetness of the prosecco and the Aperol adds a stunning red hue to the drink while adding a touch of bitterness. The dehydrated orange and edible flower garnish add a rustic charm. While you can enjoy this mimosa year-round, it feels particularly reminiscent of the fall season and foliage.
The best part about the Aperol Mimosa is how incredibly easy it is to make! You can even have a little fun testing different oranges like cara cara or blood oranges to fit what you enjoy most. So, whether you’re entertaining a large group or just you and your plus one, it’s the perfect refreshing welcome cocktail at your bridal or baby shower brunches, festive fall gatherings or cozy mornings on your favorite holiday.

- Aperol: You can generally find Aperol at any store that carries liquor or online.
- Orange juice: I recommend using fresh squeezed orange juice for this recipe.
- Chilled prosecco: Any prosecco or sparkling white wine will work. I used Mionetto Prosecco for this recipe.
- Dehydrated orange: Use for garnish as desired. I love these dehydrated oranges from Blue Henry.
- Edible flowers: Use for garnish as desired. You can typically find edible flowers at your local grocer.

How to Make This Recipe
Step 1: Rinse and juice your oranges.
Step 2: To a champagne flute – add orange juice and Aperol. Fill the rest of the glass with chilled prosecco.
Step 3: If desired, garnish with dehydrated orange and edible flowers.

Tips for Making an Aperol Mimosa
- Fresh squeezed orange juice is a must for this recipe. It adds freshness and brightness without added sugars and preservatives. If you have access to blood oranges, that would be a great option too!
- Chill your prosecco. For fresh and crisp results, make sure your prosecco is chilled for at least 2 hours ahead of time. You can even chill your fresh squeezed orange juice for an hour or two for that extra chill.
- To make for a group, I recommend combining the orange juice and Aperol in a pitcher. Pour this mixture and chilled prosecco into each champagne glass immediately before serving.
Frequently Asked Questions
A traditional mimosa is made with just orange juice while an Aperol Mimosa uses Aperol and orange juice. The Aperol adds a bittersweet taste in comparison to the generally sweet traditional mimosa.
I always recommend using fresh squeezed juices in a mimosa. However, in a pinch, you can use bottled orange juice in your Aperol Mimosa. Make sure to get 100% juice.
I recommend Prosecco or Cava for mimosas. Mimosas can be made with any sparkling white wine but you can generally get a higher quality prosecco or cava for a reasonable price. Champagne tends to be more expensive and you don’t need the most expensive bottle for mimosas since you’re adding juice.
