There’s nothing basic about this Raspberries And Cream Mocktail – it’s an absolute dream. Rich, fruity, creamy, and bright; it’ll steal your heart!

This raspberry mocktail turned out SO good. Even though raspberries and cream sounds like a decadent combo, this mocktail is made with healthy ingredients and is so yummy. 

It would be perfect for Galentine’s Day or as a great dessert drink for your Valentine date.

Recipe Ingredients

  • Raspberries: Fresh raspberries give this Valentine’s mocktail its pink glow. I used fresh raspberries from Driscoll’s. Reserve a few for garnish.
  • Coconut milk and coconut water: I used the kind that comes in a carton or tetra pack for this one, not canned. I loved these Vita Coco products for this creamy mocktail.
  • Simple syrup: A touch of sweetness balances the tartness of the raspberries and Meyer lemon juice. 
  • Meyer lemon: These are not as tart as other lemons and work great in this recipe. If using regular lemons, you can minimize the quantity slightly. 
  • Vanilla extract: A dash of vanilla brings out the creamy coconut and raspberry flavors.
  • Mint (for garnish): A sprig of fresh mint finishes this creamy mocktail off beautifully.
  • Heart gummies (for garnish): Playful, these heart-shaped gummies from Brach’s are the perfect little touch.

How to Make It

  • Into a cocktail shaker, add the raspberries and simple syrup. Gently muddle them until just broken up. 
  • Next, add the coconut water, lemon juice, vanilla extract and ice. Shake these together until chilled.
  • Strain the raspberry mocktail into a cocktail glass filled with them. Layer in the coconut milk to create a layer.
  • Garnish with the raspberries, mint, and candies. Stir and sip

Sipping Tips & FAQs

What if I can’t find Meyer lemons?
Use regular lemons if you can’t find Meyer’s. You might need to add a little extra simple syrup to balance the tartness of the creamy mocktail.

Can I use frozen raspberries?
Yes! Frozen raspberries are a great alternative. They work well and can even make the drink extra cold and refreshing. Make sure they thaw a little first.

Can I make this for a crowd?
Yes! Multiply the recipe by the number of your guests, and you’re good to go.

Use chilled ingredients: If you keep the coconut water and coconut milk in the fridge, the result will be an extra-chilled Valentine’s mocktail.

Make Ahead and Storage Notes 

You can make up the raspberry, simple syrup, coconut water, lemon juice, and vanilla extract mixture up to 24 hours before storing it in an airtight container in the fridge. 

Wait to add the coconut milk until just before serving to hold onto its creamy texture.

If you have leftovers, store them in the fridge for up to a day. Stir the mocktail before drinking it, as the coconut milk can separate.

Raspberries & Cream Mocktail

There’s nothing basic about this Raspberries And Cream Mocktail – it’s an absolute dream. Rich, fruity, creamy, and bright; it’ll steal your heart!

Ingredients
 

  • 6 raspberries, plus more for garnish
  • 1/2 oz simple syrup
  • 2 oz coconut water
  • 1/2 oz Meyer lemon juice
  • Dash vanilla extract
  • 1 oz coconut milk
  • Mint, for garnish
  • Heart gummies, for garnish

Instructions
 

  • Add raspberries and simple syrup to a cocktail shaker and muddle until broken down. Add coconut water, meyer lemon juice, vanilla extract and ice and shake until well chilled.
  • Fill a cocktail glass with ice. Strain mocktail mixture into glass. Slowly pour coconut milk in glass, creating a layer. If desired, garnish with mint, raspberries and heart gummies. Stir before enjoying.
