This gorgeous pink dragon fruit cocktail is perfect for Galentine’s Day celebrations with your girlfriends. It gets its lovely hue from pink dragonfruit. The rosé I used had berry and floral notes that worked really well in this drink.

The light, crispness of this cocktail makes it just as ideal for a lunchtime party as a nighttime one. Radiant in pink – even the boys will love it!

Recipe Ingredients

I managed to round up all these ingredients at Gelson’s Market:

  • Dragon fruit (diced): Nothing screams PINK louder than dragon fruit!
  • Simple syrup: You can use store-bought syrup or make your own by dissolving sugar in water.
  • Rosé wine: A light, fruity rosé like this one that’s floral and citrusy is perfect. A dry or slightly sweet rosé works best.
  • Gin: Hendrick’s gin adds rose and cucumber flavors that balance with the dragon fruit and rosé.
  • Meyer lemon juice: These are sweeter and less acidic than regular lemons.
  • Sparkling water: A splash of sparkling water lightens the drink and adds a touch of effervescence, making it extra refreshing. Choose unflavored sparkling water like this one from Gelson’s.
  • Vanilla extract: A little vanilla is so good in this dragon fruit cocktail.
  • Dragon fruit, mint, and edible flowers for garnish: These make the prettiest garnishing trio.

How to Make It

  • Prepare your garnishes by picking the mint leaves/sprigs and slicing the dragon fruit.
  • Place the balance of the dragon fruit into a cocktail shaker with the simple syrup and muddle them.
  • Pour in the rosé, gin, lemon juice, and ice. Shake the ingredients together until they’re chilled.
  • Add ice into a cocktail glass and strain over the dragon fruit cocktail. Add sparkling water, garnish, and sip, sip!

Ingredients
  

  • 2 tbsp diced dragon fruit
  • 1/2 oz simple syrup
  • 1 1/2 oz rosé wine I used Gelson’s Rosé Wine
  • 1 1/2 oz gin I used Hendrick’s
  • 3/4 oz meyer lemon juice
  • Splash sparkling water
  • Dash vanilla extract
  • Mint for garnish
  • Dragon fruit for garnish
  • Edible flowers for garnish

Instructions
 

  • Add dragon fruit and simple syrup to a cocktail shaker and muddle until broken down. Add rosé, gin, lemon juice and ice and shake until well chilled.
  • Strain into a cocktail glass over fresh ice. Top with a splash of sparkling water. If desired, garnish with mint, edible flowers and dragon fruit.
