Creamy Dragon Fruit Margarita

I always get so excited when I see red dragon fruit at the grocery store! It’s such a delicious treat and its deep red color makes the prettiest cocktails. So when it recently made an appearance at my local store, I was inspired to mix up the Creamy Dragon Fruit Margarita. This cocktail combines the vibrant flavor of red dragon fruit with coconut cream, zesty lime and tequila.

With its velvety texture and playful garnish, this fun cocktail is sure to transport your taste buds to tropical paradise!

What is Dragon Fruit?

Before diving into the drink, let’s discuss my fruit of choice – Dragon fruit (also known as pitaya). Dragon fruit is a tropical fruit with a pink exterior and creamy white or magenta flesh speckled with tiny black seeds. Dragon fruit is subtly sweet and refreshingly mild. It’s flavor is often compared to a combination of kiwi and pear with notes of watermelon. To prepare dragon fruit for a recipe like the Creamy Dragon Fruit Margarita, you can slice off both ends, make a lengthwise cut along the skin, peel away the skin, and dice the fruit into small, bite-sized pieces ready for blending.

Ingredients for the Creamy Dragon Fruit Margarita

A bit about the ingredients…

  • Tequila: Pick your favorite high quality tequila. I prefer a blanco tequila for mixing and used Exotico brand in this recipe.
  • Red Dragon Fruit: I used fresh red dragon fruit from Melissa’s Produce. You can also substitute white dragon fruit or use frozen dragon fruit for this recipe.
  • Coconut Cream: I used unsweetened canned coconut cream that you can find in the Asian aisle at the grocery store. Give it a stir before using it. You can also use canned coconut milk or cream of coconut. Just be mindful that cream of coconut is usually sweetened, so you would adjust the agave accordingly.
  • Lime Juice: I always prefer fresh lime juice in my margs. But bottled like Santa Cruz Lime Juice for works in a pinch.
  • Agave: Add a touch of natural sweetness with agave nectar, available in most grocery stores. You can also substitute with simple syrup or honey syrup.
  • Toasted Coconut: Toast up shredded coconut to use to rim the glass.
  • Dragon fruit and Lime: Don’t forget to garnish with dragon fruit slices and lime wheels for a visually appealing presentation.

How to Make The Creamy Dragon Fruit Margarita

Once you have your ingredients ready, it’s time to create the magic. Before mixing up the cocktail, prep 2 cocktail glasses with a toasted coconut rim.

Start by toasting your shredded coconut in a skillet over medium heat. Make sure to mix it frequently so it doesn’t burn. It should take 3 to 5 minutes until it gets a golden brown color. Add it to a shallow dish. Add agave to a second shallow dish. Coat the rim of each glass with agave, then gently dip it into the toasted coconut.

Next, prep your dragon fruit by removing the skin and dicing it into cubes. Add the dragon fruit, tequila, coconut cream, lime juice and agave to a blender and blend until the mixture is velvety smooth.

Next, fill the prepared glasses with ice and divide the blended cocktail into the glasses.

For the final touch, garnish your Creamy Dragon Fruit Margarita with slices of dragon fruit and a lime wheel. Enjoy!

Materials

  • 2 oz Tequila
  • 1/4 cup Diced red dragon fruit
  • 1 1/2 oz Coconut cream
  • 1 1/2-2 oz Lime juice
  • 1 1/2 oz Agave
  • For rim: Shredded coconut and agave
  • For garnish: dragon fruit, lime

Instructions
