Barbie seems to be all people are talking about with the release of the new Barbie movie, and what better way to celebrate than with a pink and pretty cocktail inspired by the icon? The Beach Barbie Cocktail is made with vodka, elderflower liqueur, guava juice, lemon juice, sparkling water and just a touch of beet juice to give it the perfect pink hue. Even though the color of this cocktail is intense, the flavor is actual light and effervescent with floral notes from the elderflower liqueur.

Ingredients for the Beach Barbie Cocktail

Let’s get into the ingredients for this vibrant and tropical Beach Barbie Cocktail.

  • Vodka: Choose a high-quality vodka to ensure a smooth and clean taste. I used Hangar 1.
  • Elderflower Liqueur: The sweet and floral notes of elderflower liqueur beautifully complement the other flavors in the cocktail. I opted for Fiorente elderflower liqueur for its delicate and aromatic profile.
  • Guava Juice: Guava juice brings a burst of tropical sweetness to the cocktail. You can substitute guava juice for cranberry juice if necessary.
  • Lemon Juice: A splash of fresh lemon juice adds a tangy and citrusy element. I like fresh squeezed for the best flavor.
  • Pink Edible Glitter: Pink edible glitter adds a fun shimmer.
  • Sparkling Water: Sparkling water gives the cocktail a light and effervescent quality. I like a crisp and clean sparkling water, such as LaCroix.
  • Barspoon of Beet Juice (optional): For a vibrant pink hue, add a barspoon of beet juice to the cocktail.
  • Pink Sanding Sugar: Rim the cocktail glass with pink sanding sugar for a touch of sweetness and sparkle!

Elderflower liqueur is a floral liqueur made from the blossoms of the elderflower bush. It has a delicate, sweet flavor with a hint of citrus. Elderflower liqueur is often used in cocktails, but it can also be enjoyed on its own.

How to Make the Beach Barbie Cocktail

Let’s dive into crafting the Beach Barbie Cocktail!

Create a sparkling and sweet rim for the cocktail glass. Brush the rim with honey and dip it in pink sanding sugar. Now you’re ready to make the cocktail. Add vodka, elderflower liqueur, guava juice, and a squeeze of fresh lemon juice to your cocktail glass. Give it a gentle stir. For extra sparkle, sprinkle a pinch of pink edible glitter into the glass.

Fill the glass with ice cubes and pour sparkling water over the ice, filling the glass to the brim. For an optional burst of vibrant pink color, add bar spoon beet juice and give it a gentle stir. Garnish with an edible flower and a slice of lemon.

  • 1 1/2 oz Guava juice
  • 3/4 oz Elderflower liqueur
  • 1/2 oz Lemon juice
  • Pink edible glitter
  • 2 oz Sparkling water
  • Barspoon beet juice (optional)
  • Pink sanding sugar, for rim
  • For garnish: Edible flower, lemon

Instructions

Beach Barbie Cocktail

  • Add pink sanding sugar to a shallow dish. Brush the rim of a cocktail glass with honey and submerge in sugar until coated.
  • Add vodka, elderflower liqueur, guava juice, lemon juice and edible glitter to a cocktail glass. Stir to combine.
  • Fill the glass with ice. Top off with sparkling water. If using, add beet juice and stir to combine.
  • If desired, garnish with an edible flower and lemon slice.
