This cocktail is one of my favorite ways to enjoy watermelon season. The tropical watermelon and pineapple ice cubes slowly melt into the drink, adding even more fruity flavor while creating a gorgeous presentation that’s guaranteed to impress guests. 

Even better, you can make the ice cubes ahead of time and keep them in the freezer for cocktails and mocktails all summer long.

Cocktail

  • Gin: Go for a high quality gin. I used Waterloo No. 9 Gin which goes great with fresh watermelon and tropical pineapple.
  • Fresh watermelon: Use ripe, sweet watermelon for the best flavor. 
  • Fresh lime juice: Freshly squeezed lime brightens and balances the drink.
  • Honey syrup: Equal parts honey and water. Simple syrup or agave will also work.
  • Sparkling water: Flavored or unflavored sparkling water or seltzer will work. Just make sure it’s not sweetened.

Fancy Ice Cubes

  • Pineapple juice: Look for 100% pineapple juice.
  • Watermelon juice and slices: Blend cubed watermelon for fresh watermelon juice and cut remaining watermelon into small slices for the cubes.
  • Pineapple fronds: The leaves on the pineapple are a fun garnish for the cubes

How to Make Tropical Watermelon Gin Cocktail

Make the Fancy Ice Cubes

Step 1: Slice watermelon into small triangles to fit into your ice mold. Place one pineapple frond and one watermelon slice into each cavity of a large ice mold.

Step 2: Divide the watermelon juice and pineapple juice evenly between each mold.

Step 3: Freeze for at least 5 hours or until completely frozen.

Make the Cocktail

Step 1: Add the watermelon cubes to a cocktail shaker and muddle until juicy.

Step 2: Add the gin, fresh lime juice, honey syrup, and ice.

Step 3: Shake vigorously until the cocktail is well chilled.

Step 4: Place one tropical fruit ice cube into a lowball glass and strain the cocktail over the ice.

Step 5: Top with sparkling water and garnish with fresh mint and an edible flower, if desired.

This Tropical Watermelon Gin Cocktail combines juicy watermelon, bright lime, honey syrup and gin for a refreshing summer cocktail that’s as beautiful as it is delicious.   • 1 1/2 oz gin, I used Waterloo No. 9 Gin

  • 2 oz sparkling water
