Tropical Watermelon Gin Cocktail (with Fancy Ice Cubes)
This Tropical Watermelon Gin Cocktail combines juicy watermelon, bright lime, honey syrup and gin for a refreshing summer cocktail that's as beautiful as it is delicious. Ready in just 10 minutes (plus freezing time for the fancy ice cubes), this easy gin cocktail is perfect for backyard parties, pool days, brunch or happy hour.

Ingredients
- 1 1/2 oz gin I used Waterloo No. 9 Gin
- 1/3 cup cubed watermelon
- 3/4 oz fresh lime juice
- 3/4 oz honey syrup
- 2 oz sparkling water
- Mint and edible flowers for garnish
For the ice (makes 6 cubes)
- 1 cup watermelon juice
- 1 cup pineapple juice
- 6 watermelon slices
- 6 pineapple fronds
Instructions
- To a cocktail shaker, add watermelon cubes and muddle until broken down. Add gin, lime juice, honey syrup and ice. Shake until well chilled.
- Strain the cocktail into a glass over a watermelon-pineapple ice cube. Top with sparkling water.
- If desired, garnish with mint and an edible flower.
For ice
- To a large ice mold, add a pineapple frond and watermelon slice to each cube. Divide the watermelon juice and pineapple juice into each mold.
- Freeze for 5 hours or until frozen solid.
Notes
- Prep it: Make the decorative ice cubes several days in advance for easy entertaining.
- Mocktail version: Replace the gin with coconut water or chamomile tea.
- Batch it: Scale and make it into a pitcher for entertaining. Blend the watermelon instead of muddling and add sparkling water right before serving.
