Why You’ll Love This Recipe

  • Fresh strawberry flavor: I find that homemade strawberry purée gives this spritz pretty color and the best taste.
  • Lightly floral: Elderflower liqueur adds delicate floral notes that complement the strawberries.
  • Fresh mint infusion: Letting the mint steep briefly creates a mild, herby flavor.
  • Light and bubbly: Prosecco and sparkling water keep every sip crisp and refreshing.
  • Perfect for entertaining: Ready in just 5 minutes and beautiful enough for brunches, bridal showers and garden parties.

Key Ingredients

See the recipe card for quantities.

  • Strawberry purée: Blend fresh hulled strawberries until smooth. If the mix is a bit thick, add a splash of water to help them blend. Fresh strawberries give the brightest flavor and prettiest color.
  • Elderflower liqueur: St-Germain adds delicate floral sweetness that is great with strawberries and mint.
  • Fresh mint: I like to gently clap the mint leaves between my palms before adding them to the glass to release their aromatic oils.
  • Prosecco: A dry prosecco, like Mionetto Prosecco, balances the sweetness of the fruit and elderflower.
  • Sparkling water: This just lightens the strawberry spritz.

Substitutions & Variations

  • Other fruit: Swap strawberries for raspberries or peaches.
  • Use frozen strawberries: Thaw them slightly if fresh strawberries aren’t in season.
  • More citrusy: Add a squeeze of fresh lemon juice.
  • Mocktail version: Replace the elderflower liqueur with elderflower cordial and swap prosecco for non-alcoholic or extra sparkling water.

How to Make an Easy Strawberry Spritz (Strawberry Hugo Spritz)

Make the Strawberry Purée

Step 1: Add hulled strawberries to a blender and blend until completely smooth. Add a little water if needed to help the strawberries blend.

Assemble the Cocktail

Step 1: Remove the leaves from two mint sprigs and gently clap them between your palms to release their natural oils.

Step 2: Add the mint leaves, strawberry purée, and elderflower liqueur to a large wine glass. If time allows, let the mixture sit for 1 to 2 minutes so the mint can infuse the cocktail.

Step 3: Fill the glass with ice, then pour in the prosecco and a splash of sparkling water.

Step 4: Stir gently with a bar spoon until combined.

Step 5: Garnish with fresh strawberries, mint and edible flowers (if desired) and serve immediately.

Use a large wine glass with plenty of ice to keep the spritz cold while preserving the bubbles. Stir gently after adding the prosecco to avoid losing carbonation.

Easy Strawberry Spritz FAQs

Can you make strawberry purée ahead of time?

Yes! You can make strawberry purée up to three days in advance and store it in an airtight container in the refrigerator until you’re ready to make the cocktail.

What elderflower liqueur is best for a Hugo Spritz?

St-Germain is one of the most popular elderflower liqueurs thanks to its delicate floral flavor, but other elderflower liqueurs work well too.

Can you make a Strawberry Hugo Spritz without alcohol?

Absolutely. Substitute the elderflower liqueur with elderflower syrup and use non-alcoholic sparkling wine or sparkling water for an equally refreshing mocktail.
