This easy strawberry spritz is one of my favorite twists on a classic Hugo Spritz. Fresh strawberry purée adds natural sweetness that pairs with elderflower liqueur, mint and bubbly prosecco. Make it when you need a light, refreshing cocktail that's perfect for brunch, garden parties and dreamy summer evenings.
Make strawberry purée - Blend hulled strawberries until smooth, adding a splash of water if needed to help them blend.
To a wine glass, add the leaves from 2 mint sprigs, clapping them between your palms first. Add the strawberry purée and elderflower liqueur. Allow to sit for 1-2 minutes, if time allows, to infuse the mint flavor.
Fill the glass with ice. Add prosecco, and a splash of sparkling water. Stir to combine.
If desired, garnish with strawberries, mint and edible flowers.
Notes
Steep the mint: If you have time, steep it for 1 to 2 minutes before adding ice for a more pronounced mint flavor.
Chill your prosecco: This keeps the cocktail cold and bubbly.
Mocktail version: Replace the elderflower liqueur with elderflower cordial and swap prosecco for non-alcoholic or extra sparkling water.
