Recipe Ingredients
See the recipe card for quantities.
- Outshine Fruit Blends Cherry Limeade bar: Made with real fruit and juice, these bars are such a fun addition to this mocktail.
- Coconut milk beverage: Make sure you purchase the coconut milk from the carton and not from a can. Either the refrigerated carton or shelf stable boxes will work.
- Maraschino cherries in syrup: You’ll use the syrup from the jar in the mocktail and a cherry for garnish.
- Lime juice: Fresh squeezed is best
- Vanilla extract: Always look for pure vanilla extract.
- Club soda: Or sparkling water.
- Fresh mint: Use for garnish as desired.
- Shredded coconut and marshmallow cream: Use for the rim as desired.

Substitutions & Variations
- Maraschino syrup swap: Swap for grenadine or another fruit syrup like raspberry syrup for a different flavor.
- Make it sweeter: Swap club soda for ginger ale or lemon-lime soda for a sweeter drink.
- Make it creamier: Swap coconut milk beverage for 1 oz of cream of coconut or canned coconut milk (just make sure to blend before using and shake really well).
- Cocktail version: Add 1½ oz gin or vodka per drink for an adult holiday treat.

Frequently Asked Questions
Yes, you can easily make this Christmas mocktail into a cocktail. Just add 1 ½ ounces of your favorite gin or vodka. My top pick would be gin but vodka definitely works too.
Yes! This recipe is perfect for batching.
– Mix the base ahead: Combine the coconut milk, maraschino cherry syrup, lime juice, and vanilla in a large pitcher. Chill in the fridge for up to 24 hours.
– Add soda and ice right before serving: Add club soda or sparkling water and ice rightt before serving to maintain bubbles.
– Garnishes: Rim glasses with shredded coconut and marshmallow cream individually (this can be done in advance). Add the garnishes (Outshine Cherry Limeade bars, mint, or maraschino cherries) to each glass as you serve.
Yes, you can use canned coconut in a cocktail or mocktail, but because of how thick it is, you need to blend the contents of the can before using it and/or shake extremely vigorously to avoid separation. The Cherry Merry Mocktail uses coconut milk beverage, which is thinner in consistency. If you would like to substitute canned coconut milk in this recipe, use ½ oz-1 oz of canned coconut milk.
