- Gin: Go for a high quality gin. I used Waterloo No. 9 Gin which goes great with fresh watermelon and tropical pineapple.
- Fresh watermelon: Use ripe, sweet watermelon for the best flavor.
- Fresh lime juice: Freshly squeezed lime brightens and balances the drink.
- Honey syrup: Equal parts honey and water. Simple syrup or agave will also work.
- Sparkling water: Flavored or unflavored sparkling water or seltzer will work. Just make sure it’s not sweetened.
Fancy Ice Cubes
- Pineapple juice: Look for 100% pineapple juice.
- Watermelon juice and slices: Blend cubed watermelon for fresh watermelon juice and cut remaining watermelon into small slices for the cubes.

How to Make Tropical Watermelon Gin Cocktail
Make the Fancy Ice Cubes
Step 1: Slice watermelon into small triangles to fit into your ice mold. Place one pineapple frond and one watermelon slice into each cavity of a large ice mold.
Step 2: Divide the watermelon juice and pineapple juice evenly between each mold.
Step 3: Freeze for at least 5 hours or until completely frozen.
Make the Cocktail
Step 1: Add the watermelon cubes to a cocktail shaker and muddle until juicy.
Step 2: Add the gin, fresh lime juice, honey syrup, and ice.
Step 3: Shake vigorously until the cocktail is well chilled.
Step 4: Place one tropical fruit ice cube into a lowball glass and strain the cocktail over the ice.
Step 5: Top with sparkling water and garnish with fresh mint and an edible flower, if desired.

Tropical Watermelon Gin Cocktail (with Fancy Ice Cubes)
Ingredients
- 1 1/2 oz gin, I used Waterloo No. 9 Gin
- 1/3 cup cubed watermelon
- 3/4 oz fresh lime juice
- 3/4 oz honey syrup
- 2 oz sparkling water
- Mint and edible flowers, for garnish
For the ice (makes 6 cubes)
- 1 cup watermelon juice
- 1 cup pineapple juice
- 6 watermelon slices
- 6 pineapple fronds
Equipment
Instructions
- To a cocktail shaker, add watermelon cubes and muddle until broken down. Add gin, lime juice, honey syrup and ice. Shake until well chilled.
- Strain the cocktail into a glass over a watermelon-pineapple ice cube. Top with sparkling water.
- If desired, garnish with mint and an edible flower.
For ice
- To a large ice mold, add a pineapple frond and watermelon slice to each cube. Divide the watermelon juice and pineapple juice into each mold.
- Freeze for 5 hours or until frozen solid.
