Piña Colada Spritz (Pineapple Coconut Aperol Spritz)
The Piña Colada Spritz is a light and bubbly twist on the classic piña colada, combining pineapple coconut juice, Aperol, and prosecco, for a refreshing sip that feels like a poolside getaway. Whether you’re hosting a sunny backyard brunch or just want a quick 5-minute cocktail to unwind, this Aperol spritz is an essential summer sip.

The Piña Colada Spritz is everything you love about a tropical cocktail–fruity, refreshing, and makes you feel like you’re on vacation. Aperol has citrus and bitter notes that balance perfectly with the sweetness of the pineapple and coconut juice. Top it off with prosecco and sparkling water for a tropical escape in a glass.
Since it is such an easy recipe, it’s perfect for impromptu weekend brunches, after work happy hours at home or anytime you need to transport to another place, if only for a minute. Plus, the vibrant colors and tropical fruit garnish are so dreamy.
Recipe Ingredients

- Aperol: I love mixing up traditional cocktails with a twist.
- Prosecco: I used Mionetto Prosecco. Champagne or your sparkling white wine of choice will also work.
- Pineapple Coconut Juice: I used Langer Farms Pineapple Coconut Juice. If you don’t have access you can use pineapple juice and coconut water, just make sure to purchase a brand without added sweeteners.
- Sparkling water or club soda: The choice is yours! I used LaCroix sparkling water as I typically have them around the house.
- Pineapple & Orange: Use for garnish if desired.

How to Make This Recipe
Step 1: Fill a wine glass with ice. Add Aperol, pineapple coconut juice, Prosecco and a splash of sparkling water. Stir to combine.
