I’m loving fresh mocktails with fresh produce lately and this Green Dream Mocktail is delicious and hydrating.

The base of the drink is fresh cucumber and green apple juice. I recommend making fresh juice using a juicer or blender. If that’s not possible, head to a juice bar and ask for cucumber and green apple juice. 

Another green juice of your choice would also work in this green mocktail. Since juice can vary in sweetness, adjust your honey syrup quantity according to your taste.

Recipe Ingredients

  • Basil leaves: Using fresh basil leaves adds fragrance to this green mocktail. 
  • Honey syrup: Combine 1 part honey with 1 part warm water. I love the honey from Local Hive.
  • Cucumber: Organic is nice for this recipe since I like to juice with skin on.
  • Green Apple: Tart green apple is my favorite for this recipe but another apple would work too!
  • Lime juice: Fresh lime juice is best
  • Club soda: I used the club soda from Q Mixers.
  • Edible flower, cucumber: For garnish

How to Make It

Make Cucumber Green Apple Juice

  • Juicer method: Slice the cucumber and green apple into pieces that fit into your juicer. Juice them using a juicer.
  • Blender method: Dice cucumber and green apple. Blend them until smooth, adding a bit of water if needed to help with blending. Once blended, strain the juice through a fine mesh strainer to remove any pulp.

Make the Mocktail

  • Place the basil leaves and honey syrup into a cocktail shaker. Muddle gently to release the basil’s oils without tearing the leaves. 
  • Add the cucumber apple juice, lime juice, and ice to the shaker, then shake until well-chilled. 
  • Strain the mixture into a glass over ice. Top with club soda and garnish with cucumber slices, edible flowers, and extra basil. Sip sip away on your green apple mocktail!

Muddle gently
When muddling the basil, take care not to tear the leaves. Gently press to release the oils, as this enhances the flavor without creating an overly bitter taste.

Use fresh ingredients
Fresh basil, cucumber, and green apple create the best flavor profile. Go for organic produce, if possible.

Adjust the sweetness
If you prefer a sweeter green mocktail, you can add a bit more honey syrup. Taste and adjust to your liking before shaking.

Is this a good choice for pregnancy?
Yes! It’s perfect to sip on and quench your thirst during pregnancy.

Make Ahead and Storage Notes 

If I want to save time, I prepare the cucumber green apple juice and honey syrup a day or two ahead and then store them in airtight containers in the fridge.

Ingredients
 

  • 6 basil leaves, plus more for garnish
  • 1/2 oz honey syrup, 1 part honey, 1 part water
  • 2 oz cucumber apple juice, or green juice of choice
  • 1/2 oz lime juice
  • Club soda
  • Cucumber, for garnish
  • Edible flower, for garnish

Cucumber Green Apple Juice

  • 1 cucumber
  • 1 green apple

Instructions
 

Prepare Cucumber Green Apple Juice

  • Cut cucumber and green apple. Use a juicer to juice. Alternately, add to a blender and blend until smooth. Add a splash of water if necessary to blend. Strain using a fine mesh strainer.

Prepare Drink

  • Add basil and honey syrup to cocktail shaker. Gently muddle to release oils from basil, but be careful not to tear the basil apart. Add cucumber apple juice, lime juice and ice to the shaker and shake until chilled.
