Why You’ll Love This Recipe

  • No alcohol needed: Empress 1908 0.0 Indigo brings the same striking color and botanical character as the original, alcohol-free.
  • Pretty layered look: Slowly pouring the Indigo over the pineapple coconut juice creates a gorgeous gradient effect.
  • Flavored rim: The dried edible flower, sugar and salt rim makes this feel extra special.
  • Ready in 5 minutes: No shaker required, just muddle, pour and garnish.
  • Great for a crowd: Easy to make one at a time for a mocktail bar at your next gathering.

Key Ingredients

See the recipe card for quantities.

  • Empress 1908 0.0 Indigo: A non-alcoholic spirit with the same vivid indigo color and botanical profile as Empress 1908 Gin. It shifts color beautifully when it hits citrus, which is part of the fun here.
  • Raspberries: Muddled with the lemon juice for a tart, fruity base. Fresh raspberries work best, but frozen (thawed) will do in a pinch.
  • Pineapple coconut juice: Adds tropical sweetness and a creamy body to balance the tart raspberry and lemon.
  • Lemon juice: Fresh is always best!

Substitutions & Variations

  • No pineapple coconut juice? A mix of pineapple juice and a splash of coconut cream works well too.
  • Swap the berries: Blackberries or muddled strawberries make a nice substitute for raspberries.
  • Cocktail version: Swap Empress 1908 0.0 Indigo for classic Empress Gin.

Carolyn’s Tips for Making a Raspberry Getaway Mocktail

  • Pour slowly for the layered look: Pouring the Empress 1908 0.0 Indigo slowly over the back of a spoon creates that beautiful gradient effect.
  • Use crushed ice: It keeps the mocktail cold without diluting the layers too quickly.

Raspberry Getaway Mocktail FAQs

What is Empress 1908 0.0 Indigo?

It’s the non-alcoholic version of Empress 1908 Gin, made to have the same striking indigo color and botanical character, minus the alcohol. It’s a great way to add color and depth to a mocktail.

Can you make a raspberry mocktail ahead of time?

You can prep the rim and muddle the raspberries with lemon juice ahead of time, then store it covered in the fridge for a few hours. Add the ice, juice and Indigo just before serving so the layered effect and color hold up.

Does Empress 1908 0.0 Indigo change color like the regular gin?

Yes! Just like the original Empress 1908 Gin, the 0.0 version shifts from indigo to pink when it meets citrus, which is part of what makes this mocktail so fun to watch come together.
