Pumpkin Mocktail Sour


The Pumpkin Mocktail Sour brings together the essence of pumpkin without the punch of alcohol. The heart of this mocktail lies in a chilled black tea base. I used Meyer lemon, with its mild, citrusy notes, but you can use regular lemon if you prefer drinks on the more tart side. I had canned pumpkin puree on hand, and it worked great!

Creating a foamy texture was a breeze with aquafaba, which is just the liquid from a can of garbanzo beans. If you need to sub, an egg white has the same effect. Dashes of turmeric and pumpkin pie spice round out the drink, infusing it with that unmistakable fall flair. 

Ingredients for the Pumpkin Sour Mocktail

  • Black Tea: Chilled black tea is the base of the mocktail. I like DavidsTea.
  • Meyer Lemon: Meyer lemons are the key to balancing the tartness of regular lemons with their milder, sweeter profile.
  • Pumpkin Puree: Canned pumpkin puree works great and is a huge time saver! I used Libby’s 100% Pure Pumpkin.
  • Aquafaba: Aquafaba, the liquid from a can of garbanzo beans, creates a rich, foamy texture. If you prefer, you can substitute it with 1 egg white.
  • Pure Maple Syrup: A touch of pure maple syrup adds sweetness and warmth. I like Maple Grove Farms Organic Pure Maple Syrup.
  • Turmeric: A dash of turmeric brings a warm, golden hue and a subtle spice.
  • Pumpkin Pie Spice: No pumpkin-themed drink would be complete without a dash of pumpkin pie spice – a combo of cinnamon, nutmeg, and allspice!
  • Star Anise: Elevate your presentation with a finishing touch of star anise, if desired.

How to Make the Pumpkin Sour Mocktail

Let’s dive into crafting the Pumpkin Mocktail Sour! Start by brewing a fresh cup of black tea, and let it chill. In a cocktail shaker, combine the chilled black tea, Meyer lemon juice, pumpkin puree, aquafaba, pure maple syrup, turmeric, and a dash of pumpkin pie spice. Give it a dry shake – without ice – until it turns foamy. Next, add 2-3 large ice cubes to the shaker, and give it a good shake until the cubes are melted. Pour the Pumpkin Mocktail Sour into a coupe glass, and top it with a sprinkle of pumpkin pie spice and a star anise for garnish. Cheers!

What is Meyer Lemon?

Meyer lemons, unlike their more traditional counterparts, bring a unique touch to the mocktail. They offer a milder, sweeter, and slightly floral flavor profile, making them an ideal choice to balance the tartness in this drink. If you decide to substitute them with regular lemons, remember that your drink may lean towards the tangy side, so be sure to adjust accordingly.

Materials

  • 2 oz black tea, chilled
  • 1 Meyer lemon
  • 1/2 tbsp pumpkin puree
  • 3/4 oz aquafaba
  • 3/4 oz pure maple syrup
  • Dash of turmeric
  • Dash pumpkin pie spice
  • For garnish: star anise

Instructions

  • Brew black tea and chill.
  • Add black tea, juice from meyer lemon, pumpkin puree, aquafaba, maple syrup, turmeric and pumpkin pie spice to a cocktail shaker and dry shake (without ice) until foamy. Add 2-3 large ice cubes and shake until cubes are melted. Pour into a coupe glass.
  • Top with a sprinkle of pumpkin pie spice and star anise, if desired.
