I’ve been going through SO many popsicles these past few weeks. It’s keeping me cool through this mini heatwave, plus, it’s one of the best summertime treats! I’ve been trying lots of different flavors, but I always come back to this refreshing Raspberry Popsicle by Outshine, so, I knew I had to make a drink that encompasses my love for popsicles. This Hibiscus Popsicle Punch Mocktail is my ode to that. The best of both worlds – a tart and refreshing mocktail with the exciting addition of a popsicle! Ingredients for the Hibiscus Popsicle Punch Mocktail

  • Hibiscus iced tea: I used dried hibiscus flowers (sometimes called flor de jamaica) at specialty markets or you can order it here. You can also substitute the dried hibiscus flowers for 2 hibiscus tea bags. 
  • Lemon wedge: add in a squeeze of fresh lemon juice for some tart, citrus notes.
  • Berry popsicle: the main character of this mocktail is the berry popsicle. I used this Raspberry Popsicle by Outshine. But, you can choose your preferred berry popsicle or even experiment with other flavors like lemon or pineapple popsicles. 
  • Sparkling water: top your mocktail with a little fizz. I used La Croix sparkling water. 
  • Raspberries, lemon slice, sage: garnish your mocktail with raspberries, lemon slice, and a sprig of sage.

How to Make the Hibiscus Popsicle Punch Mocktail

Let’s make this mocktail! Start by prepping your hibiscus iced tea. I made mine by steeping dried hibiscus flower (alternatively you can use 2 hibiscus tea bags) in a mug with boiling water and a little bit of sugar for 5-10 minutes. Allow the tea to cool in the refrigerator for 20-30 minutes. 

Next, add the hibiscus iced tea, a squeeze of lemon juice, and sparkling water to a glass and stir. Place a berry popsicle in the glass, stick side up. If desired, garnish with raspberries, lemon, and sage. Enjoy immediately because the popsicle will melt quickly.

Materials

  • 3 oz hibiscus iced tea lightly sweetened
  • Lemon wedge
  • ½ cup sparkling water
  • 1 Berry popsicle
  • Garnish: raspberries, lemon slice, sage

Instructions

  • Add hibiscus iced tea, a squeeze of lemon juice and sparkling water to a glass and stir.
  • Place a berry popsicle in the glass, stick side up.
  • If desired, garnish with raspberries, lemon and sage. Enjoy immediately.
