Another week, another delectable peach cocktail! I mixed up this tasty cocktail with friends for my birthday dinner and everyone loved it! And they looked fab in Zafferano America’s fun party tumblers. The Peach and Lychee Cocktail combines exotic flavors with a refreshing twist, and using just a few simple ingredients, it’s the perfect drink to sip on all summer long.

This delicious batch cocktail is a fusion of sweet peach juice, tangy lemon juice, and the unique taste of pandan-infused gin. Lychee juice from canned lychees adds a subtle sweetness that complements the other ingredients perfectly.

The infusion process for the gin is takes 1-2 days, and is so worth it! It adds a depth of flavor that sets this drink apart from others. With just a few ingredients and a bit of prep, this cocktail is both sophisticated and incredibly tasty. Cheers!

How to Make the Peach and Lychee Cocktail

Creating this delicious cocktail is easy and most of your prep time will be infusing the gin!

The first thing to prep is the pandan-infused gin. Combine gin and dried pandan leaves in an airtight jar and let it infuse in the refrigerator for 1-2 days. Once infused, strain out the pandan leaves and discard them.

Next, in a large pitcher, combine the pandan-infused gin, lychee juice from the canned lychees, freshly squeezed lemon juice, peach sparkling water, and peach juice. Stir well to combine all the ingredients.

To serve, divide the mixture into glasses filled with ice cubes. Garnish each glass with lychees, fresh peach slices, and edible flowers before enjoying!

Ingredients
  

Cocktail

  • 1 1/2 cup pandan-infused gin
  • 1 can lychees
  • 2 large lemons, juiced
  • 2 12-oz cans peach sparkling water
  • 1/2 cup peach juice
  • Peaches, for garnish
  • Edible flowers, for garnish

Pandan-Infused Gin

  • 3 cups gin (I used Malfy con Limon)
  • 1/2 cup dried pandan leaves

Instructions
 

Cocktail

  • Add pandan-infused gin, the juice from the can of lychees, lemon juice, sparkling water and peach juice to a pitcher and stir to combine.
  • Divide into glasses over ice. Garnish with lychees, peach slices and edible flowers.

Pandan-Infused Gin

  • Add gin and dried pandan leaves to an airtight jar. Infuse in the refrigerator for 1-2 days. Strain out solids using a fine mesh strainer. Discard solids.
