For my twist, I infused vodka with fresh seasonal rhubarb to complement the brightness of the lemon sorbet. Make sure to set aside 24-72 hours to infuse the vodka.
While I like prosecco for this cocktail, feel free to use cava or champagne as a sub. Lemon sorbet adds a velvety texture, so enjoy as soon as you’ve prepped the cocktail for the freshest sips!
Crafting the Rhubarb Sgroppino is a cinch, and most of your prep time will be making the rhubarb infused vodka – so plan ahead!
To start, prepare the rhubarb-infused vodka by combining diced rhubarb stalks with vodka in a jar. Seal the jar and refrigerate for 24-72 hours to allow the flavors to meld. When ready to use, strain out the solids using a mesh strainer.
Once the infused vodka is ready, scoop a generous portion of lemon sorbet into a mixing glass or cup. Next, add the rhubarb-infused vodka and prosecco, then gently whisk until smooth and well-combined.
Pour the mixture into a coupe glass, and if desired, garnish with a touch of edible flowers and a slice of fresh rhubarb. Enjoy immediately!
