Rhubarb Sgroppino
The Rhubarb Sgroppino is a seasonal rift on the classic Italian summer drink! Featuring refreshing blend of lemon sorbet, rhubarb-infused vodka, and bright prosecco.
Ingredients
Rhubarb Infused Vodka
- 1 1 rhubarb stalk, diced
- 1 cup vodka
Rhubarb Sgroppino Cocktail
- 1 heaping scoop lemon sorbet
- 3/4 oz rhubarb infused vodka
- 3 oz prosecco
- Garnish: edible flower, rhubarb
Instructions
Rhubarb Infused Vodka
- Add diced rhubarb and vodka to a jar and seal. Refrigerate for 24-72 hours. When ready to use, strain out solids using a mesh strainer.
Rhubarb Sgroppino Cocktail
- Add lemon sorbet, rhubarb vodka and prosecco to a mixing glass or cup. Whisk until smooth.
- Pour into a coupe glass. If desired, garnish with rhubarb and edible flowers. Enjoy immediately.
