Apricot might just be my new fave cocktail ingredient! The Apricot Gin Cocktail combines the amazing flavors of sweet apricot with the botanical notes of gin and the unique taste of Italicus.

Lemon juice provides a little tartness, balancing the sweetness of the apricot and honey. While I recommend fresh squeezed lemon juice, bottled lemon juice works here too. This cocktail recipe is not only delicious but also so easy to make. If you’ve never tried extra virgin oil in your cocktails, you’re in for a treat. Drizzle it as a last step for a rich, smooth finish that makes the drink even tastier to sip on. It’s the perfect cocktail to enjoy the shorter days of summer!

What is Italicus?

Italicus is an Italian liqueur made from bergamot and a blend of other botanicals. Known for its distinctive floral and citrusy flavor, Italicus adds a unique and sophisticated touch to cocktails. Its refreshing and aromatic profile makes it a versatile ingredient, perfect for mixing up with a variety of drinks.

  • Apricot: Fresh apricots add a sweet and a little tart flavor.
  • Honey: Adds natural sweetness and depth to the cocktail. A touch of sugar or simple syrup works as a substitute. I used Local Hive Honey.
  • Gin: A neutral spirit that forms the base of the cocktail, complementing the apricot flavor. Choose a quality gin with botanical notes. I like Hendrick’s Gin.
  • Italicus: An Italian liqueur that brings a unique floral and citrusy note to the apricot cocktail.
  • Lemon Juice: Freshly squeezed lemon juice adds a bright, citrusy tartness to balance the sweetness. Bottled lemon juice works here in a pinch.
  • Extra Virgin Olive Oil: A drizzle of extra virgin olive oil adds a rich, smooth finish to the cocktail.
  • Apricot and Edible Flower: For a delicate garnish! I love Gourmet Sweet Botanicals.  A lemon twist would also work here.

How to Make the Apricot Gin Cocktail

Mixing up the Apricot Gin Cocktail takes just 5 minutes a few simple ingredients!

Start by adding half an apricot and a teaspoon of honey to a cocktail shaker. Muddle until the apricot is broken down and the apricot juice is well mixed with the honey. Next, add gin, Italicus, lemon juice, and ice to the shaker. Shake vigorously until the mixture is chilled.

Strain the cocktail into a chilled glass (I used these cocktail glasses). For the finishing touch, drizzle with a bit of extra virgin olive oil. If desired, garnish with a slice of apricot and an edible flower.
