This easy halloween cocktail is a spooky twist on a classic Sarti Spritz, made with Sarti Rosa, lychee syrup, prosecco, sparkling water, and butterfly pea tea for a festive purple hue. It takes just 5 minutes to make and gets its Halloween-worthy look from an easy lychee “eyeball” garnish! The fruity, slightly tart flavor makes this a great alternative to the darker, heavier Halloween cocktails you often see this time of year.

I love a Halloween cocktail that looks impressive without requiring a complicated recipe, and this vibrant Sarti Spritz definitely checks that box. The drink itself comes together in just a few minutes, but the little lychee + blueberry eyeballs make it feel like you put in way more effort than you actually did. It’s a fun cocktail to serve at a Halloween party, girls’ night, or even while watching your favorite spooky movie.

The combination of sweet, fruity Sarti Rosa and lychee syrup pairs really well with bubbly prosecco, while the butterfly pea tea gives the spritz its gorgeous purple color. And since the tea is mostly here for the color, you can easily leave it out if you want to keep things even simpler.

Why You’ll Love This Recipe

  • It’s genuinely easy: Everything is built right in the glass, so there’s no shaker needed.
  • The purple color is naturally festive: Butterfly pea tea gives the drink a spooky purple hue without dramatically changing the flavor.
  • The eyeball garnish steals the show: Canned lychees and blueberries create an easy Halloween garnish that looks creepy but is actually delicious.
  • It’s light and bubbly: Sarti Rosa, prosecco, and sparkling water create a refreshing spritz that’s perfect for sipping throughout a party.
  • Modern alternative to a classic spritz: Sarti Rosa’s flavor notes are more juicy and feature prominent tastes of Sicilian blood orange, mango, and passion fruit – yum!
  • It’s a little different from the typical Halloween cocktail: Instead of leaning heavily on cranberry, apple, or dark spirits, this one is fruity, bright, and colorful.

Key Ingredients

See the recipe card for quantities.

  • Sarti Rosa: The star of the cocktail! Unlike more bitter aperitifs like Aperol or Campari, Sarti Rosa is sweet, fruity, and tart. If you enjoy elderflower liqueur or a Hugo Spritz, you’ll likely enjoy Sarti too. For another way to use it, try my Sarti Spritz.
  • Lychee syrup: Use the syrup from canned lychees for an easy way to add sweetness and lychee flavor without making a separate simple syrup.
  • Prosecco: Adds the bubbles and keeps the cocktail light and refreshing. A dry prosecco like Mionetto Brut helps balance the sweeter ingredients.
  • Sparkling water: A splash of sparkling water lightens the drink and adds even more fizz. A plain LaCroix is a great option.
  • Butterfly pea tea: This is what gives the cocktail its festive purple color. It doesn’t significantly affect the flavor, so you can skip it if you’d rather make the simplest version possible. I included it in my version and used Bigelow.
  • Canned lychees + blueberries: These come together to create the spooky eyeball garnish. Look for whole canned lychees that are large enough to fit a blueberry inside.

Substitutions & Variations

  • Skip the butterfly pea tea: If you don’t have butterfly pea tea, simply leave it out. The cocktail will still taste delicious, but it won’t have the same purple color.
  • Use another sparkling wine: Prosecco can be swapped for another dry sparkling wine or champagne.
  • Make it less sweet: Use less lychee syrup and choose a brut prosecco for a drier cocktail.
  • Make a larger batch: For a Halloween party, multiply the ingredients and combine the Sarti Rosa, lychee syrup, and butterfly pea tea in a pitcher. Add prosecco and sparkling water just before serving so the bubbles stay fresh.
  • Try another spooky spritz: If you love festive twists on spritzes, my Apple-rol Spritz is another fun option for fall.

How to Make Spooky Sarti Spritz (Easy Halloween Cocktail)

Step 1: Make the eyeball garnish

Drain a few canned lychees (but keep the syrup!). Choose whole lychees with a large enough opening in the center. Place one blueberry inside the center of each lychee to create the look of a little eyeball. Make one or two for each cocktail, or prepare several ahead of time if you’re serving a crowd.

Step 2: Build the spritz

Fill a wine glass with ice. Add the Sarti Rosa, lychee syrup, prosecco, sparkling water, and chilled butterfly pea tea.

Step 3: Stir and garnish

Give everything a gentle stir to combine without knocking out too many bubbles. Add the lychee eyeballs, blackberries, and a sage leaf, if desired.

Carolyn’s Tips for Making Spooky Sarti Spritz (Easy Halloween Cocktail)

  • 👻 Make the eyeball garnish ahead: The lychee + blueberry eyeballs can be prepared several hours in advance and refrigerated until you’re ready to make the cocktails.
  • 💜 Butterfly pea tea note: Make sure it’s chilled before adding to the cocktail.
  •  It’s primarily used for the purple color and doesn’t contribute much flavor, so the cocktail works without it.
  • 🍹 Make it a mocktail: Replace the Sarti Rosa and prosecco with additional sparkling water or a non-alcoholic sparkling wine. Use the lychee syrup, butterfly pea tea, and spooky garnish for a festive alcohol-free option.

Spooky Sarti Spritz (Easy Halloween Cocktail) FAQs

What is Sarti Rosa?

Sarti Rosa is a bright, fruity Italian aperitivo with sweet and tart flavors. Unlike bitter aperitifs such as Aperol or Campari, Sarti Rosa has a softer, fruit-forward flavor that works especially well in bubbly spritz cocktails.

How do you make a Halloween cocktail look spooky?

Easy Halloween cocktail garnishes can make a simple drink feel festive without requiring complicated techniques. For this Sarti Spritz, canned lychees and blueberries create edible eyeballs, while butterfly pea tea gives the cocktail a deep purple color – both adding such a fun finishing touch!

Can I make a Sarti Spritz ahead of time?

You can prepare the lychee eyeball garnishes and chill the butterfly pea tea before serving. You can also assemble some of the cocktail ahead of time by adding the Sarti Rosa, lychee syrup and chilled butterfly pea tea to each glass. Then when you’re ready to serve, include the ice, prosecco and a splash of sparkling water so the carbonation lasts. (Don’t forget to gently stir each glass!)

What does lychee taste like?

Lychee has a sweet, juicy and subtly floral flavor and it pairs nicely with Sarti Rosa because both have fruity, slightly tart profiles, while the prosecco keeps the drink bright and bubbly.
