Summer is coming to an end so it’s time to get all the adult popsicle making out of your system! These Strawberry Coco Peach Pops are the perfect way to end the summer.

August is actually just the beginning of the heat in San Diego. And since we don’t have AC, I may be making boozy popsicles for the next few months to cool off. Just like in my cocktails, I prefer to use fresh ingredients so that’s what I did for these Boozy Strawberry Coco Peach Pops.

These adult popsicles have a little bit of booze and a lot of fresh fruit! So you don’t need to feel bad if you want to have a second or third.

For the strawberry layer, I used fresh strawberries and orange juice. And for the coconut peach layer, I used frozen peaches, Coco Sky Liqueur and coconut water for some extra hydration. Coco Sky Liqueur is made with coconut water, sweet cream and gin which worked so well with the peaches.

For a kid-friendly version of this recipe, you can replace the Coco Sky Liqueur with vanilla yogurt!

Boozy Strawberry Coco Peach Pops

Adult Popsicles: Boozy Strawberry Coco Peach Pops

Yield: 10 popsicles

Materials

  • 1 cup strawberries
  • ¼ cup orange juice
  • 2 cups frozen peach slices
  • ¼ cup Coco Sky Liqueur
  • ¼ cup coconut water
  • 5 strawberries, sliced

Instructions

  • Blend strawberries and orange juice together and divide evenly into your popsicle molds. Freeze for 30 minutes.
  • In the meantime, blend peach, Coco Sky Liqueur and coconut water together. Remove popsicles from the freezer and drop 1-2 strawberry slices in each mold. Pour the blended peach mix into each mold. Add a popsicle stick and freeze 2 hours or until frozen solid. To remove the popsicles from the mold, gently run under warm water until the popsicles easily slide out from the mold. Enjoy!
