Your New Favorite Sparkling Wine Cocktail: The Ruby Wonderland Cocktail

Take your holiday gatherings to the next level this season with The Ruby Wonderland Cocktail! It boasts a bit of sweetness, some slightly tart notes, and a bubbly finish. This mixed drink incorporates the perfect ingredients for a holiday cocktail, especially if you’re a lover of sparkling wine.

Plus, my favorite part of this sparkling wine cocktail is the Domaine Carneros Brut! This varietal is the newest release of their Estate Brut Cuvée which features light notes of poached pear, crisp apple, yuzu, and honeydew melon. This exclusive sparkling wine has been aged to perfection and is ready to be enjoyed right in time for the holidays!

I used the Spirited Sparkle Gift Set from Domaine Carneros to create the Ruby Wonderland Cocktail. You can purchase this beautiful holiday gift set for yourself or a friend this season here. Cheers!

Ingredients for the Ruby Wonderland Cocktail

  • Domaine Carneros Brut: This sparkling wine varietal is fresh, crisp, and complex. It includes notes of pear, crisp apple, yuzu, honeydew melon, and pie crust with a toasty finish that lingers on the palate. Enjoy sipping this sparkling wine solo or in a festive cocktail like this one.
  • Grapefruit juice: For bright, citrus notes, I used freshly squeezed grapefruit juice. However, some alternatives for grapefruit juice include Meyer lemon juice for more of a tart cocktail or fresh squeezed orange juice for a sweeter taste.
  • Amaretto: this Italian liqueur adds more dimension with some slightly bitter, almond-tasting notes. I used Disaronno, but here’s a guide to other Amaretto options
  • Orange bitters: for more depth add in a few drops of orange bitters, I used Angostura Orange Bitters for this cocktail.
  • Orange Blossom Cocktail Cube or sugar cube: make this cocktail even more exciting with a flavored cocktail cube. For this mixed drink, I used the cocktail cube from Flouwer Co. But you can also use a normal sugar cube for the sweetness and finish.
  • Grapefruit slice, rosemary, star anise: garnish this cocktail with a fresh slice of grapefruit, a rosemary sprig, and a star anise for a complete look.

How to Make the Ruby Wonderland Cocktail

Let’s make the Ruby Wonderland Cocktail! Start by adding the grapefruit juice, amaretto, orange bitters, and ice to a cocktail shaker. Shake the cocktail tin until the outside is chilled. Next, strain the cocktail mixture into a coupe glass, and top with Domaine Carneros Brut. Add the orange blossom cocktail cube to the glass. If desired, garnish with a grapefruit slice, rosemary, and star anise.

The Best Sparkling Wine to Use in the Ruby Wonderland Cocktail

For this cocktail, I used Domaine Carneros Brut – the newest release of their Estate Brut Cuvée features notes of poached pear, crisp apple, yuzu, honeydew melon, and pie crust with a toasty finish that lingers on the palate. This winery exclusive has been aged to perfection yet will enjoy additional evolution in the cellar over the next decade.

Domaine Carneros produces some of the highest-quality wines. Located in Napa Valley and sprawling into Sonoma County, California where their Estate Vineyards now total 400 acres dedicated to growing Pinot Noir and Chardonnay grapes. Domaine Carneros was established in 1987 by the same noble family behind the famous French brand, Champagne Taittinger

Their winery is available for tours and tastings or private events! Plan your visit here and check out the classically beautiful Domaine Carneros Château for yourself!
