This drink is a springtime rift on the classic gin and tonic, combining Empress 1908 Gin with the tangy sweetness of homemade rhubarb syrup. Empress 1908 Gin is a premium spirit known for its gorgeous indigo hue, derived from the infusion of butterfly pea blossoms.
Homemade rhubarb syrup is crafted from fresh seasonal rhubarb, sugar, water, and a hint of vanilla extract, for a delightful tartness and a burst of springtime flavor. You’ll need about 30 minutes to prep the rhubarb syrup in advance, so be sure to plan ahead!
A dash of pink peppercorn adds a pop of color and tonic water provides the perfect bubbles to balance the other ingredients. A squeeze of fresh lime juice incorporates the refreshing elements of the classic gin and tonic. Top the Rhubarb Empress & Tonic with an edible flower, snap a pic for Insta, and enjoy sipping!
Most of your prep work will be making the rhubarb syrup, so plan ahead!
Start by crafting the rhubarb syrup. In a saucepan, add fresh rhubarb with sugar, water, and a touch of vanilla extract and bring to a boil. Reduce the heat and let simmer for 30 minutes. Once cooled, strain the syrup into a jar, discarding any solids.
When it’s time to mix the cocktail, start by filling a glass with ice. Add a generous splash of rhubarb syrup, followed by the tonic water. Slowly pour the Empress 1908 Gin over the back of a spoon to create a layered effect.
