Grilled Peach and Burrata Salad

When I want to elevate my summer dining experience with a mouthwatering recipe that celebrates the sweet and savory flavors of the season, this Grilled Peach and Burrata Salad is it.

I put Travis on grill duty to grill juicy peaches, added generous dollops of burrata, prosciutto, basil, and good olive oil for a salad that is bursting with flavor and gorgeous colors!

Pour your favorite white wine, like this Chenin-Blanc + Viognier Blend, grab some crusty crostini, and dig in!

What is Burrata?

Burrata is a luxurious Italian cheese originating from Puglia. It’s a type of fresh mozzarella with a soft, creamy center made of stracciatella and cream. Skilled cheesemakers craft this delicacy by stretching and pulling mozzarella curds into a pouch, then filling it with the creamy mixture. Burrata’s versatility makes it a favorite in various dishes, from salads to pasta and more. I love it fresh to savor its delicate flavors at their best.

Ingredients for the Grilled Peach and Burrata Salad

Let’s dive into the ingredients for this salad.

  • Peaches: Grilling ripe peaches enhances the sweetness and adds a smoky element to the salad. I got mine from Trader Joe’s.
  • Burrata: Use burrata while it’s fresh to get the most out of its creamy texture. I like BelGioioso.
  • Prosciutto: The saltiness of prosciutto, a dry-cured Italian ham, perfectly complements the sweetness of the peaches.
  • Basil: A sprinkle of basil leaves add a fresh and vibrant touch.
  • Olive oil: A drizzle of good-quality olive oil brings it all together.
  • Sea salt and freshly ground pepper: Simple seasoning unlocks the full flavor of this salad.

How to Make the Grilled Peach and Burrata Salad

Start by slicing peaches into wedges and set them aside. Preheat grill to high heat and lightly oil the grates to prevent sticking.

Once the grill is ready, place the peach wedges on it and let them cook for about 2-3 minutes on each side.

Take a platter and arrange the grilled peach wedges on it. Next, pull apart the burrata into pieces and scatter them over the peaches. Lay the slices of prosciutto across the salad.

Drizzle some high-quality olive oil over the salad. Finally, sprinkle fresh basil, sea salt, and freshly ground pepper to taste. Dig in!

  • 2 ripe peaches
  • 8 oz burrata (2 balls)
  • 4 oz prosciutto
  • 8-10 fresh basil leaves
  • olive oil
  • Sea salt and freshly ground pepper

Instructions

  • Cut the peaches into wedges.
  • Preheat grill to high heat and lightly oil grates. Grill peaches for 2-3 minutes on each side.
  • Arrange grilled peaches on a platter. Pull apart the burrata into pieces and add to the platter. Add prosciutto. Drizzle with olive oil and salt and pepper to taste. Sprinkle with basil leaves.
