Creamy Pomegranate Mocktail
The addition of creamy coconut milk tones down the sharp taste of the pomegranate and lime. It also gives it the prettiest pale pink color.
This recipe can easily scale in a chilled pitcher and is great for the holidays. Go ahead and adjust the sweetness to your liking. I love that the maple syrup doesn’t make it too sweet
Recipe Ingredients
Pomegranate juice: Go for 100% pure juice for the best flavor. I use the Pom brand.
Lime juice: Freshly squeezed lime juice really brings out the other flavors in this mocktail.
Maple syrup: Adjust this to create balance in your drink if you need to. Agave or honey syrup could be a good substitute for maple syrup
Coconut milk: Go for coconut milk that comes in a carton or bottle instead of canned coconut milk. Try Vita Coco!
Club soda: Turns this drink bubbly. I used Q Mixers in my recipe. You can also try sparkling water for a gentler fizz.
Lime wheel (garnish): Look so cute in this drink.
Pomegranate arils (garnish): These are optional, but I love the look!
Rosemary sprig (garnish): Gives the drink a piney taste that settles the sweet tartness of the pomegranate.
Into a cocktail shaker, add the pomegranate juice, lime, maple syrup, coconut milk, and ice. Shake to chill the ingredients.
Strain the ingredients into a cocktail glass with ice. Top the glass with club soda and stir gently. Garnish and serve!
