Creamy Blueberry Mojito

The traditional mojito, a refreshing blend of mint, lime, rum, and soda water, is a summertime classic. I was inspired by those flavors and gave them a vibrant, creamy twist with the Creamy Blueberry Mojito!

Blueberries, available year-round, and packed with antioxidants, lend a gorgeous color and a hint of tanginess that complements the mint and lime perfectly! A splash of coconut milk adds a luxurious creaminess. With a burst of fruity sweetness and a touch of the tropics, this cocktail is perfect for summer sips!

How to Make the Creamy Blueberry Mojito

This Creamy Blueberry Mojito comes together in just 10 minutes! Begin by blending fresh blueberries until smooth, adding a splash of water if needed. Strain the puree through a fine-mesh sieve to remove any solids.

Next, combine sugar and lime zest on a small plate. Moisten the rim of a glass with citrus or honey and dip it into the sugar mixture.

In a cocktail shaker, gently muddle the mint leaves with simple syrup to release their oils. Add the rum, blueberry puree, lime juice, coconut milk, and ice. Shake vigorously until chilled.

Fill the rimmed glass with ice, strain the cocktail mixture into the glass, top with sparkling water, give a gentle stir, and garnish with fresh mint leaves, blueberries, and edible flowers for a finishing touch!

Ingredients
  

  • 10 mint leaves, plus more for garnish
  • 1/2 oz simple syrup
  • 1 1/2 oz white rum
  • 3/4 oz blueberry puree
  • 1 oz lime juice
  • 3/4 oz coconut milk
  • 1/4 oz sparkling water
  • Sugar, for rim
  • Lime zest, for rim
  • Blueberries, for garnish
  • Edible flowers, for garnish

Instructions
 

  • Prepare blueberry puree: Blend blueberries. Add a splash of water if necessary. Use a fine mesh strainer to strain into a cup, discarding solids.
  • Combine sugar and lime zest on a shallow dish. Moisten the rim of a cocktail glass with citrus juice or honey. Dip in the sugar mixture until the rim is coated.
  • Add mint leaves and simple syrup to a cocktail shaker and gently muddle to release the oils from the mint. Add white rum, blueberry puree, lime juice, coconut milk and ice and shake until chilled
  • Fill prepared cocktail glass with ice. Strain cocktail mixture into the glass. Top with sparkling water and combine. If desired, garnish with mint, blueberries and edible flowers.
