To a cocktail shaker, add lemon wedges. Muddle firmly to release the juice and oils.
Add Waterloo Prickly Pear & Rose Gin, jam and ice.
Shake vigorously for 20-30 seconds until well chilled. Taste the mixture before straining. If needed, add more lemon juice or jam.
Strain into the glasses over fresh ice.
If desired, garnish with berries, lemon slices and edible flowers.
Notes
🍓 Use your favorite berry jam: Strawberry, raspberry, blackberry, or mixed berry all work. The flavor of the jam will noticeably change the finished cocktail.
🍋 Taste before straining: Jams vary in sweetness, so taste the cocktail after shaking and adjust with more lemon or jam as needed.
🥄 Shake vigorously: Give the cocktail a good 20-30 second shake to help fully incorporate the jam.
🍹Mocktail version: Swap the gin for coconut water or chilled tea like chamomile or green tea.
