Ingredients
Spiced Persimmon Syrup

persimmon, diced

coconut sugar

mulling spices

vanilla bean paste

spiced persimmon syrup

oz
ginger beer

lemon juice

sparkling water
Garnish: Persimmon, thyme, star anise
For Batch: Serves 8-10

2 1/2 cups ginger beer
2 1/2

2 1/2 oz lemon juice

sparkling water
Sliced persimmon, sliced lemon
Instructions
Spiced Persimmon Syrup
Add all ingredients to a small saucepan. Bring to a boil over medium heat, stirring occasionally. Reduce heat and simmer for 20 minutes.
Remove from heat and cool. Strain into a container.
Spiced Persimmon Mocktail
Add spiced persimmon syrup, ginger beer, and lemon juice to a glass. Fill the glass with ice. Top off with sparkling water.
If desired, garnish with a persimmon slice, thyme and star anise.
For Batch:
Combine all ingredients in a pitcher with ice. Divide into glasses and enjoy.
