Spiced Persimmon Syrup
- 1 persimmon, diced
- 3/4 cup coconut sugar
- 1/2 tbsp mulling spices
- 1/4 tsp vanilla bean paste
- 1 cup water
Spiced Persimmon Mocktail
- 3/4 oz spiced persimmon syrup
- 2 oz ginger beer
- 1/4 oz lemon juice
- 1/2 cup sparkling water
- Garnish: Persimmon, thyme, star anise
For Batch: Serves 8-10
- 1 cup spiced persimmon syrup
- 2 1/2 cups 2 1/2 cups ginger beer
- 2 1/2 oz 2 1/2 oz lemon juice
- 5 cups sparkling water
- Sliced persimmon, sliced lemon

Spiced Persimmon Syrup
Add all ingredients to a small saucepan. Bring to a boil over medium heat, stirring occasionally. Reduce heat and simmer for 20 minutes.
Remove from heat and cool. Strain into a container.
Spiced Persimmon Mocktail
Add spiced persimmon syrup, ginger beer, and lemon juice to a glass. Fill the glass with ice. Top off with sparkling water.
If desired, garnish with a persimmon slice, thyme and star anise.
