Instructions
Prepare a coupe glass with a sugar and spice rim: Add sugar and 1/4 tsp pumpkin pie spice to a shallow dish and stir to combine. Add maple syrup to a second shallow dish. Coat the rim of the glass with maple syrup and submerge in the sugar and spice mixture until the rim is coated.
Add all cocktail ingredients to a cocktail shaker with ice. Shake vigorously until chilled. Taste the mixture and add a dash of maple syrup if you prefer a sweeter cocktail.
Double strain cocktail mixture into prepared glass, using a fine mesh strainer. Top with a sprinkle of pumpkin pie spice and star anise, if desired.
Notes
Cool the espresso before shaking, to avoid melting the ice and diluting your cocktail too much.
Taste your mixture before straining and modify to your taste. You may want to add a dash of maple syrup, especially if you use regular vodka.
