This Pineapple Coconut Mockarita is made with pineapple juice, coconut milk, lime juice, coconut water, sea salt, and toasted coconut for a tropical-pineapple mocktail.
Prepare glass- Add toasted coconut to a shallow dish. Moisten the rim of the glass with honey and dip in the coconut, until coated.
To a cocktail shaker, add pineapple juice, coconut milk, lime juice, coconut water, sea salt and ice. Shake vigorously until well chilled.
Fill the prepared cocktail glass with ice. Strain mocktail mixture into the glass. If desired, garnish with a pineapple frond, lime wheel and pineapple slice.
Notes
For the smoothest texture, use Thai coconut milk. Other canned coconut milks can be a bit chunky. If so, blend before shaking and shake really well to fully incorporate.
