Piña Colada Hugo Spritz (Tropical Elderflower Spritz)
This Piña Colada Hugo Spritz is a tropical, bubbly cocktail made with pineapple coconut juice, prosecco, elderflower, and fresh mint. Ready in just 5 minutes, it’s crisp, lightly sweet, and perfect for spring gatherings, summer brunch, or an easy happy hour sip.
Ingredients
- 6-7 mint leaves
- 1/2 oz elderflower liqueur such as St. Germain
- 2 oz pineapple coconut juice
- 4 oz prosecco chilled
- Pineapple and lime slice for garnish
Instructions
- To a wine glass, add mint leaves and elderflower liqueur. Gently muddle then let sit for 1-2 minutes to allow the mint to infuse.
- Fill the glass with ice. Add pineapple coconut juice and prosecco. Stir to combine.
- If desired, garnish with a pineapple slice, frond and a lime slice.
Notes
- Lightly muddle the mint: Press gently to release flavor without making it bitter.
- Use chilled ingredients: Cold prosecco and juice keep the spritz crisp and refreshing.
- Mocktail version: Swap prosecco for sparkling water or non-alcoholic prosecco (I love Mionetto’s) and use elderflower syrup instead of liqueur.
