If you’re looking for an easy Easter cocktail, this Passion Fruit Spritz is a fun and fresh take on the classic Aperol spritz. It comes together in just a few minutes, making it perfect for Easter brunch or any spring gathering.
Cut both passion fruit in half. Reserve the seeds and pulp from one half. Strain the juice from the remaining passion fruit halves into a wine glass.
Fill the wine glass with ice. Add Aperol, prosecco and sparkling water. Stir to combine. Top the drink with the seeds and pulp from the reserved passion fruit.
If desired, garnish with carrot ribbons and carrot greens.
Notes
Chill your prosecco and sparkling water beforehand to keep the drink crisp.
Prep ahead by straining the passion fruit juice and storing it in the fridge for up to 24 hours. Build your cocktail just before serving to keep it fresh and hold onto the bubbles.
Bottled passion fruit juice is often a blend with other juices, so you may need to use a little more to achieve the same intensity as fresh passion fruit.
For a mocktail version, swap prosecco for non-alcoholic prosecco or sparkling water and replace Aperol with pomegranate or cranberry juice or a non-alcoholic aperitif.
