The Japanese Plum Sour is a tangy and refreshing twist on a classic sour cocktail, featuring homemade plum purée, cognac, and a hint of orgeat.

Plum Puree

plum puree

lime juice

orgeat

egg white
1
dash aromatic bitters
Plum, for garnish
Instructions
Prepare plum puree: Slice plum and blend with water. Strain into glass, discarding solids.
Add cognac, plum puree, lime juice, orgeat, egg white, bitters and ice to a cocktail shaker. Shake until chilled and foamy.
Strain mixture into a coupe glass. If desired, garnish with plum slices.
