Ingredients

Plum Puree

  • 1 plum
  • 1/3 cup water

Cocktail

  • 2 oz cognac
  • 1 oz plum puree
  • 1/2 oz lime juice
  • 1/2 oz orgeat
  • 1 egg white
  • 1 dash aromatic bitters
  • Plum, for garnish

Instructions

  • Prepare plum puree: Slice plum and blend with water. Strain into glass, discarding solids.
  • Add cognac, plum puree, lime juice, orgeat, egg white, bitters and ice to a cocktail shaker. Shake until chilled and foamy.
  • Strain mixture into a coupe glass. If desired, garnish with plum slices.
