- 2 oz cognac
- 1 oz plum puree
- 1/2 oz lime juice
- 1/2 oz orgeat
- 1 egg white
- 1 dash aromatic bitters
- Plum, for garnish

Prepare plum puree: Slice plum and blend with water. Strain into glass, discarding solids.
Add cognac, plum puree, lime juice, orgeat, egg white, bitters and ice to a cocktail shaker. Shake until chilled and foamy.
Strain mixture into a coupe glass. If desired, garnish with plum slices.
