Add honey and a splash of boiling water to a pitcher. Whisk together until honey is dissolved. Add more water if necessary.
Add all other ingredients to the pitcher and stir.
Serve over ice. If desired, garnish with an orange slice and edible flower.
Notes
Use chilled sparkling water.
To make in advance, store the tonic in an airtight container in the fridge for up to 24 hours. Add sparkling water just before serving to maintain the fizz.
