Materials

Spiced Persimmon Syrup

  • 1 persimmon, diced
  • 3/4 cup coconut sugar
  • 1/2 tbsp mulling spices
  • 1/4 tsp vanilla bean paste
  • 1 cup water

Spiced Persimmon Mocktail

  • 3/4 oz spiced persimmon syrup
  • 2 oz ginger beer
  • 1/4 oz lemon juice
  • 1/2 cup sparkling water
  • Garnish: Persimmon, thyme, star anise

For Batch: Serves 8-10

  • 1 cup spiced persimmon syrup
  • 2 1/2 cups 2 1/2 cups ginger beer
  • 2 1/2 oz 2 1/2 oz lemon juice
  • 5 cups sparkling water
  • Sliced persimmon, sliced lemon

Instructions

Spiced Persimmon Syrup

  • Add all ingredients to a small saucepan. Bring to a boil over medium heat, stirring occasionally. Reduce heat and simmer for 20 minutes.
  • Remove from heat and cool. Strain into a container.

Spiced Persimmon Mocktail

  • Add spiced persimmon syrup, ginger beer, and lemon juice to a glass. Fill the glass with ice. Top off with sparkling water.
  • If desired, garnish with a persimmon slice, thyme and star anise.

For Batch:

  • Combine all ingredients in a pitcher with ice. Divide into glasses and enjoy.
