The Lemon Meringue Cocktail is as stunning as it is delicious! This decadent yet refreshing drink marries the tartness of fresh lemon with the sweetness of meringue and smoothness of Finlandia Vodka.
Making meringue takes a little patience, but it’s not that hard and the results are well worth it. Using an egg at room temperature is key for achieving the perfect meringue topping and that light, fluffy texture.
Limoncello is an Italian liqueur that perfectly complements the fresh lemon juice and sweet meringue. An edible flower tops the cocktail, adding a touch of elegance and ushering in the vibrant spirit of spring!

Crafting this cocktail is easy and fun to tap into the bright energy of the spring season!
Start by making the meringue. Using a mixer with the whisk attachment, whip the room temperature egg white until smooth and glossy, then add lemon juice and continue to whip until stiff peaks form. Slowly sprinkle in the sugar, continuing to whip until the mixture is thick and holds its shape. Note that the meringue recipe will make enough for multiple cocktails.
Next, prepare the cocktail. In a cocktail shaker, combine Finlandia Vodka, limoncello, lemon juice, vanilla extract, and a dash of simple syrup. Add ice, then shake vigorously until the mixture is well-chilled.
Strain the cocktail into a coupe glass, then use a piping bag (or snip the corner of a plastic baggie), pipe the meringue over the top of the drink. Use a culinary torch to gently toast the meringue until golden brown.
If desired, garnish the Lemon Meringue Cocktail with an edible flower for an extra spring touch!
Can I use an alternative to limoncello in the Lemon Meringue Cocktail?
Limoncello adds a unique citrusy sweetness to the cocktail, but if you don’t have any on hand, you can incorporate lemon curd, lemonade or another citrus liqueur.
Can I make the meringue topping in advance?
I recommend making the meringue topping just before serving. If necessary, you can prepare the meringue topping ahead of time and store it in an airtight container in the refrigerator for up to a day. When you’re ready to serve the cocktails, simply give the meringue a quick stir to ensure it’s still smooth and fluffy before piping it onto the drinks.
How do I use a culinary torch to toast the meringue?
Keep the flame moving constantly to prevent burning, and hold the torch at a slight angle, about 6 inches away from the meringue, to evenly brown the surface. Always make sure that your work area is well-ventilated and free from any flammable objects.
What can I use as a substitute for the edible flower garnish?
If edible flowers are not available, you can opt for a twist of lemon or lime peel, a small slice of lemon, or a sprig of fresh mint.
What type of glassware should I use for serving the Lemon Meringue Cocktail?
The Lemon Meringue Cocktail works well in a coupe glass, which has a wide, shallow bowl and a short stem. If you don’t have coupe glasses, you can also use a martini glass or a rocks glass.
